We Dilliwaalas love our Dal Makhani, Butter Chicken and Naan meals. Bukhara, in ITC Maurya, was amongst Asia’s 50 best restaurants in 2017. It has introduced generations of diners to the rustic flavours of India's North West frontier with a menu that hasn’t changed in more than 35 years. The restaurant has served more than 2.5 million plates of Dal Bukhara - black lentils, tomatoes, ginger and garlic simmered over slow coal fires for 18 hours. This is not exactly Dal Makhani, but similar. Highlights from the tandoor oven include Sikandri Raan - spiced leg of lamb - and Murgh Malai - creamy chicken kebab. Popular with celebrities and heads of state, Bukhara has hosted the Clintons, Tony Blair, Arnold Schwarzenegger and the Indian cricket team over the years. Their famous family naan is approximately four feet in diameter!

@@shashank797 brother i am a Hotelier by degree and worked for itc too the recipie of this dal was originally from Kesar da dhaba Amritsar. Unique thing that made dal bukhara special one is overnight dal heat by coal and lentil to butter ratio hope it will help yourstory.com/2017/03/kesar-dhaba-amritsar/

Is buhkara dal more tastier than dal makhani which is aviable in kesar ka dabha amritsar....
You can't really compare. We have had both and both of them are not really dal makhani. Kesar da dhaba has maa ki dal or kali dal. And this dal bukhara is totally different from it!
Acc. To me bukhara is the best five star restaurant in delhi with fullfilling menu

Thank you for sharing the video. But tasting a dish and being blown by its tang is something that all of us may evince while dining privately or with friends/family. When you make efforts to capture your gastronomic escapades, you should elaborate on the flavour pattern of ...let us say the Dal Bukhara for example and how is it different from a dal makhni/ what is that fundamental difference in its taste that has carved a niche for itself.
(Yes, you have mentioned it in your description but that I too can write by just looking at the Dal that it looks like a makhni but is not. You were invited into the kitchen and should have made good use.)
For example, Mark Wiens. He drools but informs the audience on the drool-worthy factor.

Nice Interesting video. Bukhara is indeed matchless. One that comes close to Bukhara (if not beat it) is Peshawari in ITC Grand Maratha (Mumbai) and Royal Vega in ITC Grand Chola (Chennai).
