So why does those chords are AbM7, Gm7 and Fm7? I thought they are Cm, Bb(major) and Ab(major)

The guitar player is leaving out the bass note. The bass player is playing that note, so there is no need to include it.
AbMaj7 is Ab, C, Eb, and G. If you leave out the bass note it’s just a Cmin triad.
Gm7 is G, Bb, D, F. Without the bass it’s a Bb major triad.
Fm7 is F, Ab, C, Eb. Without the bass note it’s Ab major triad.
