Hey man please don't stop making these covers, I simply love them and I am using these to study how to make songs like those. By the way, could you tell me the orchestral instruments that more combine with each other?
In general I suggest experimenting with the combination of instruments, since it is a creative matter. And then again it depends on the genre of music, just think about the individual qualities of each instrument (e.g. is it best used for long/short notes or trills, which intervals and melodic lines sound the most natural etc.). Since you already study the music of others you could even begin to recreate tracks by ear (if you don't already do it), that's how I learned a lot and I'm convinced you'll learn many things as well about orchestration and combining instruments.
