      the white fungus mushroom has a very delicate distinct flavor and texture. never seen one with that quality before. Stunning! Salt may obscure the delicate flavor and modify the texture.

    UA, I really love your approach to your reviews. Your "brand" is that you are straight-forward, super-honest, and have no pretensions. I dont care that you are learning about different foods and that if you dont like or understand something, you just admit that. It's refreshing. I also think Tina is a great contributor and you will defer to her and learn from her, as in this video. Finally, you are very talented in describing food, which is not easy to do. And you can do it without saying "umami" in every sentence. Keep up the good work.

      Also, that he is a bit of a naive schmuck. That is a big part of his appeal as far as I am concerned. He is not going into these restaurants as an expert. He is going in as a middle class Asian-American who never ate any of this stuff growing up. He is always concerned about the price and he is self-deferential and kind

    You are SO funny! I truly appreciate the honesty of your videos. This restaurant is so beautiful and I liked how they offered you additional food for free (at a michelin starred restaurant!!). I would really love to see you do a review of abcV in NY - I keep vegetarian and it looks amazing and I have wanted to go there for forever.

    Another great review. You should try the full tasting menu at Le Bernardin, it is a much better experience then the lunch menu and would be a more fair comparison to the Ramsey tasting menu

    Love your videos! Next time you're in Vegas, you should try Wing Lei at the Wynn, think it was the first Michelin-starred Chinese restaurant in the U.S. when it opened (One Michelin Star at the moment).

      I recall he did the 3-course lunch tasting menu at Le Bernadin for $127, although that didn't include tax or tip.

    I have never been to a fancy restaurant but I know from watching Bourdain visit Ramsays in London that amuse bouche is "an amusment of the mouth, something to prepare you for the meal to come"

    I lived in Beijing 4 years, now in Kunming but experienced fine dining at TRB Hutong in Beijing. You should try while there. They have meat and seafood!!

    Ok so #1. That milk pudding looked BEAUTIFUL! Huge fanatic here of a dessert of such sort. #2. The outside of the restaurant looked like a great place to conduct a Mortal Kombat tournament. 😂 #3. Def an eye shocker looking at all these exquisite dishes I've never seen or thought of before even existed. 👍

    Thanks for taking us to yet another interesting restaurant. You always remain resolutely yourself, although this time your description of the appearance, textures and tastes of the food seemed even cheekier and rebellious than ever. Be that as it may, I did not realize you do not read Chinese characters. I know Japanese and Chinese characters are similar but not exactly the same--often the modern simplifications of older characters at not at all the same in the two languages, there are Japanese characters that do not exist in China, and vice versa. I'm often amazed at ramen places here in New York that claim to be Japanese, and use exclusively Chinese characters in the menu. (Although some Japanese think ramen is Chinese, not Japanese food) As far as I can tell, 京北戸are the characters for 北京Beijing reversed, and 戸is typically translated as 'door' but often is a synecdoche that refers to 'house'. Maybe you can ask your companion to explain; nowhere do I see any character 王for 'king' or perhaps 喜for joy. How can they justify this translation of their name?

      I don't know exactly how it works. However, when I tried to use a translation tool, I got the first character 京 (jing) means capital (city). Of course Beijing mean "northern capital", but apparently 京 by itself is accepted as a shortened version of Beijing. Not sure what the middle character is, as a get a bunch of different answers. The last one is 戸 (yin), which I'm guessing is the family name since the head chef is named Gary Yin.
      You can also find something on Wictionary. I'd link it but that would just go into purgatory. These three characters have a specific historical meanings. I'd think the use of these characters might be intentional because they can mean different things, including a neighborhood in an ancient capital of China, the head official of that neighrborhood, or official government positions for capital cities.

    It was a sweet and chill place. For the Asian flavour this is really good.
    Fun fact. Since our little son brought his empty plates back and talked to the staff about the taste, they made him a lot of new dishes to try out. Litlle mouse got his dinner for free.'
    And be informed, you can ask for a waiter to explain the dishes in english XD...

    I looked up the chef's bio. Went to high school in British Columbia and college at the University of Toronto. Listened to an interview, and he sounded like he was Chinese-American, which isn't unusual if he grew up in BC.

      Hadn't heard that before. However, I found an interview of him. He was born in Taiwan and raised in Canada. His bio says that he went to a private school on the edge of the Vancouver metro area.

    I tend to mistrust Michelin assessments of Chinese restaurants, but I appreciated the mix of influences that executive chef Gary Yin brought here. The presentation reminded me of Kaiseki. There's a few English language RUclips channels featuring the food or the story, but almsot none actually assessing the experience. I was surprised though not to see high concept takes on Chinese Buddhist Vegetarian cuisine (which is great BTW for anybody interest), there didn't seem to be any Seitan or Tofu meat analogue dishes featured for this price fixe.

    Hi UA. Great video. I have a question but its not about the food. I live in Connecticut USA and have never visited Chini know you have been in Chin before. What are the differences and similarities between living in NJ/NYC area and visiting China. In the USA we have a conception that China is very politically controlled. Thank you.

    I love you and your reviews because they are honest and unassuming, but maybe you should stick to more simple cuisine. Disliking a majority of dishes at a 3 Michelin star restaurant usually says more about the diner than the restaurant. 😑

    This video makes me trust UA's reviews more than ever. Pretty much the exact same reactions I would have going to a vegetarian restaurant, albeit one with 3 Michelin stars.
    So refreshing that his honesty in food reviews never wavers.

    Le Bernardin's reputation is not what it once was, so not too surprising that you preferred Restaurant Gordon Ramsay. RGR is the only 3 star I've been to, but I've been to more than 50 starred restaurants now in total. As a vegetarian, this one is interesting to me - I've been to 5 "pure" vegetarian restaurants with stars, it's an increasing trend.

      The "skin" of the "meatball" was a morel mushroom (or part of one at least). Definitely worth seeking out, they are my favourite mushroom, ahead of the likes of maitake and matsutake.
