Have no musical knowledge whatsoever to underpin my opinion but IMHO this adds a sensual element, a romantic element, the absence of which is why Saties piano pieces are my favourite music of whatever kind. At one time in my life, for reasons too complicated to explain in brief, I completely stopped listening to music... except Satie. The almost clinical quality of his work, dare I say the innocence of it, is what makes it so very pure and unique. What's presented here is merely his melody adorned with the usual frills and furbelows of inferior types of music. The only good thing is the tempo.
It's for score readability kinda. The 1sts in the stratosphere on the page would get too close to the harp part above it. For a conductor, the note and what octave it's in is plenty info. Guessing they wanted to keep the score height a bit short too. Edit: I looked at the separate violin parts on imslp and they also have 8va, so I think it's just a preference on appearance.
Tbh it just takes away all of the atmosphere that made the original gymnopedies so good, that and the changes made just completely ruin the mood the original established In a vacuum I wouldn't say this is bad but it just doesn't really match the original at all, like parts of this orchestration for the first piece just sounds hopeful while the original gymnopedie was alot more melancholy
Not sure, according to the bio by Mary E. Davis, the 2 april 1888, the trois gymnopedies were completed (p32), so 5 years before his short relationship with Valadon. But between him and Debussy, who knows what really happened, even more considering it's the only time that debussy would have orchestrated another composer's work (p35), perhap's it would be better to ask cherchez l'orchestrateur ? ;) Joke aside, two pieces are recognized as being "addressed" to Valadon, "Bonjour Biqui" on the early days and "Vexations" at the end.

What's with the wierd use of 8va's in 1st and 2nd violins during gymnopédie no.3? I tried sight reading along, and that really caught me off guard
