When I saw part one I was intrigued. My husband passed away last year (thank you VA for that 2 year waiting list) and I was thinking I can do this. Then I had concerns about the foundation and asked around. I need to make the base layer of cement about 2 - 3 inches deeper to avoid freeze heaving it here in Montana. I think my 14 year old son and I can do this. Great little project. The electric smoker we have drives me nuts.

+Rhiahl I'm sorry to read about your hubby. I am thankful for his service and ashamed as an American of the lack of care and leadership you and yours had to deal with from the VA....you all deserved better.....we need people like him.

Can you hold a temp of around 80 degrees or 100 degrees or less?

Absolutely. That's the point of having your fire away from the building structure. The temperature can be adjusted by the distance and amount of wood you add. A lot of folks don't realize this is a COLD smoking facility.

Is this a "cold" or "hot" smoker?

Cold....note the distance from the smoke to the house...
