Please dont follow his temperature recommendation guys - it'll ruin your dessert faster than a speeding bullet. Ive tried 220 C for pastry and it ruined everything. Always stick to 180 C for pastry and let it cook slowly. It takes time but turns out a beautiful golden pastry.

Apart from whether it's a valid concern or not, it's not like it'll be cold, or even room temp, because those apples won't be particularly cold.
