    Yes, I realized that recently. So that means you need to fry your meat & shrimps separately then add to your rice?

      I haven't tried it, but I saw people fry things first, then taking them out again to make the fried rice and add in the precooked ingredients again later.

    Do you cover the rice or leave it in an open container to refrigerate 🤔

      Cool the rice as quickly as possible, put it in a container, cover the container and refrigerate for 24-48 hours.

    High heat or medium heat?

      Always high heat first, then switch to medium heat whenever you feel the food might burn. (unless you want some crispy scorched food)

      I just use a fork or fingers to break up the leftover refrigerated rice before I even add it to the wok. Seems easier than in the pan.

    Don't eat 3 day old rice even if its kept in fridge.

      Refrigerated 3 day old rice is completely safe to eat. The fear of Bacillus cereus in properly stored rice is completely overblown in western countries, stemming from a case in 2008 where a man left spaghetti out on the counter for five full days before reheating it and eating it. The reason this was called “fried rice syndrome” was because it contained the same bacteria that is found in spoilt rice, B. cereus.
      Following regular food safety rules (5 days is the upper limit for most refrigerated food). Will make sure you are generally okay. Asians around the world have been eating 3 day old refrigerated rice since the dawn of refrigeration without problem.
