  • This coconut bread roll made by Poolish method is very simple to make and has a strong coconut aroma.
    🍞INGREDIENTS
    ________________________________________________________
    ☘️Poolish
    Bakers flour 50g
    Water 50g
    Dry yeast 1g
    ☘️Dough
    Bakers flour 210g
    Milk powder 15g
    Caster sugar 30g
    Medium egg 1pc (55g with shell)
    Condensed milk 25g
    Poolish 100g
    Milk 60± g
    Dry yeast 3g
    Salt 3g
    Unsalted butter (soften) 25g
    ☘️Coconut filling
    Fine desiccated coconut 50g
    Melted unsalted butter 25g
    Caster sugar 20g
    Milk powder 8g
    Egg 20g
    Brush with the mixture of egg and milk
    Sprinkle almond flakes
    ☘️** Preheat oven to 170C/340F
    ** Bake at 170C/340F for 20mins

    昨天烤了一盘,非常好吃。椰蓉味道香甜浓郁,面包松软。用杏仁片装饰,不仅增加了颜值,也在口感上增加了一点香脆。我用的就是超市买的玛芬纸杯,烤出来也挺好的。

    Thank you for this recipe - keen to try this! If I don't have a stand mixer, can I use a hand mixer or knead it until shiny instead?

      Yes, you can knead by hand or use hand mixer with a dough hook

    Hi Lisa! Looking forward to trying this recipe out. I don't have the large muffin lining though- do you have any other alternative methods that you recommend? E.g. can I just use a large muffin tray without the lining or make the mould out of baking paper?

      @@LisasKitchen Tried out this recipe today with your tips above and the results were amazing. The bread was super soft and so fragrant. Heated them up in the microwave for 10 seconds the next day and they were still delicious! Thank you for your easy to follow recipes along with the tips and tricks. Really makes a difference 🥰

    Hi can I shape the dough and put them in fridge overnight to proof and bake in the morning?

      For this dough, you can't use the cold proof for the final proof, it is better to proof at 35 degrees Celsius with 75-85% humidity. For some dough with high content of water, you can use the cold proof.

    This morning I rebake this receipt..but when I make the coconut filling,why the consistency still dry ? So that it cannot spread smoothly like yours..Though I made it the same as the filling receipt.

      As there is butter in the coconut filling, when the room temp is low, the filling will get hard. You can put the filling in the microwave for about 5-10 seconds, I believe the filling will be easily spread.
