This is helpful information. I usually just turn down the volume directly on the plugin, then use the mixer knob to adjust the instrument sound to taste in context with the other sounds in the beat/song. You exposed some new techniques. I'll be watching this video over, until I understand what you were doing with the gain plugin and the peak and loudness. Can you do a mixing tutorial video? This video is a literal goldmine of understanding. I just learned so much, thanks man. It was like the last secret sauce tidbits I needed to really solidify my understanding.
Pre-fader metering is just a good way to see the level of the signal entering the channel. But it’s also important to check post fader metering to see what is exiting the channel and being sent to downstream processors
There would be no difference. -18 full scale average would still be the optimal input level. You can then increase or decrease the input level a bit, to achieve the desired tone.

What's the key command to normalize region?
It may differ based on the version of Logic you’re using. Try looking under the edit menu in the main tracks view.
