Today I make apple & rhubarb crumble, chicken & ham pie and show you my new 'gift wrap station'

  • I thought I would share with you how I make my apple and rhubarb crumble, my chicken and ham pie and show you the fabulous gift wrap station that Rob helped me with over the weekend. I love it! Hope you enjoy the video xx
    Apple and Rhubarb Crumble
    2lbs bramley apples, peeled and cubed
    1lb of rhubarb cut into two inch pieces
    8 oz flour
    Optional.... 2 slices of toasted bread (blitzed with the flour)
    4 oz cold butter
    2oz granulated sugar
    1 oz demerara sugar
    Gently poach or microwave the apple and rhubarb until soft, I added two tablespoons of sugar before cooking, no extra liquid.
    Blitz or rub in by hand the flour/toast mix with the cubed cold butter, don't overdo it, rough breadcrumbs is what you are looking for.
    Add the sugar and add to the top of the cold stewed fruit.
    Freeze at this point if required. Defrost to use.
    Cook at approx 40 mins at 175 C until the top looks toasted and cooked.
    Chicken and ham pie:
    1.5 lbs cooked chicken
    10 oz of cooked gammon or 6 rashers of bacon (cooked)
    4 oz chopped onion or shallots (I use frozen)
    2 oz butter
    2 oz flour
    1 and 1/4 pints of milk
    1 tbsp of dijon mustard
    1 stock cube
    1 heaped tsp of Tarragon (optional)
    Salt and pepper to taste
    10 x 8" tin
    Two packs of frozen pastry. I use ready rolled, one of shortcrust and one of puff pastry.
    Melt the butter in a large pan, add the onion/shallots and fry gently, then add the flour slowly and bring together to form a roux by gently adding the milk, whisking rapidly all the time.
    Add the dijon, stock, tarragon and salt and pepper.
    I added some left over peas, you could add frozen at this point if required.
    Add the chicken and gammon/bacon until combined with the sauce.
    Leave to cool.
    Line the tin with shortcrust on the bottom of the tin and once cooled add the chicken mix.
    Top with the flaky pastry.
    I froze the pie at this point but if eating immediately, brush the top with beaten egg and bake in a hot oven for approx 40 mins until golden brown.
    If cooking from frozen, leave to defrost completely and then follow instructions above.

    Helen that pie and the crumble looked delish I always thought ham and chicken pies were difficult to make so maybe I will try now. Don’t stress about the filming does it matter NO that’s why we enjoy the vlogs they are different like others have said before we never know what’s coming and it’s like watching a friend thank you 🙂

    Both pie and crumble looked amazing. Love them both. Had a bit of Deja vu when you got the spatula out of the drawer, I thought I had pressed the rewind button, but no, we got bonus double footage 🙂Great idea with your wrapping station.

    I love Easter too because it is the start of some nice weather, here in Canada we can get pretty cold but it was cool and rainy this Easter. I was lucky to be able to see all 4 grandchildren which is the best part for me and spoiling them with food and presents. I have been enjoying your videos seeing how a woman my age lives in England and what she wears. I too am the same age turning 67 this June 27th. When are you turning 67 i believe it is also this year. Anyway much greetings from across the pond not too far from Toronto, Canada.

    Ah dijon mustard is one of my star ingredients! Add it to a slow cooker stew or pot roast, delish! I couldn't be without it (or Worcester Sauce). Going to have a go at the pie. 😋

    Gosh Helen. You knowledge is endless and you just keep giving. Toast in my crumble is definitely something I will try and ,for someone who is nervous about making a pie, you have given me confidence to have a go. I do make a great macaroni cheese with mustard so it is not so dissimilar What a sign of real love making your gift wrapping station. Looks amazing.     oh I did enjoy this vlog, I always enjoy the baking ones, good to know I'm not the only one with patchwork pastry, I will try the toast crumbs next time I do a crumble, we had chicken and ham pie yesterday but I cheated and used M & S tinned chicken in white sauce, but it was delicious, Loved your wrapping station, what a good idea keeping stuff in pristine condition, I sometimes have to iron my wrapping paper it gets so creased x

    Your gift wrapping station is such a clever idea, everything neatly sorted and ready for use. Your pie and crumble look yummy! I have rhubarb growing in my garden and that should be ready soon. Crumble is my favourite easy go-to dessert, and I think the toast crumbs would stop the topping getting stodgy. Great idea!

    Easter is just a mini Christmas here in the US!!! Presents - only not as many! Rhubarb is so expensive here in the US - we love it, and my husband's favorite pie is rhubarb (nothing else - just rhubarb). Impossible to find a plain rhubarb pie here - always with strawberry and all the taste of the rhubarb is swamped! For me to buy enough rhubarb to make a pie, it will cost about $15 for the fruit!! I live in a condo, otherwise I would plant a bush, just like we had in the UK!.

    Yum yum good hearty food it’s the best…….. thanks for sharing Helen you make it look home made and like me do not mess about. I think that’s comes from being in a big family I have 3 sisters so 6 of us. We never had processed food and only home grown veg so that is how we carried on with our families. I Love the work station so practical and easy to use so that half the battle solved. You are so well organised and that inspires me to do like wise. 🥰

    Sainsbury bought Argos in 2016 and have Argos shoes attached to main Sainsbury's stores.

    Loved this video Helen, great idea for the crumble, toast, I’m going to be trying that also the pie looked yummy.     That sauce looked perfect, i could taste it here in the US. I love the idea of using toast in the crumble mixture. Rhubarb is one of my favorite parts of spring. I am a fairly new subscriber on your channel. I really like the variety you have here. Mary in Mich.

    When making a savoury pie I use a tin of Campbell condensed chicken soup (or mushroom) instead of a sauce. It's much quicker & I find it quite acceptable.

    Hmm toast that’s one to try, I usually add a few crushed ginger biscuits and an ounce or two of oats, or sometimes a handful of granola….love the school story…the first thing I made was rice pudding and had to get it home riding my bike…wasn’t much left in the dish when I got home..🤷‍♀️
