Because of this, kimchi reduces blood pressure, lowers cholesterol, and just makes you feel good because it helps the digestive system so much. Most of the world is now eating Kimchi which I think is amazing. I hope that people all over Pakistan begin making their own versions of kimchi. It is easy to make and is a great way for villagers to preserve cabbage and other vegetables for long periods of time. However, as Mama said, making it together with friends and family is truly what makes kimchi an even more blessed food Here where I live in America, kimchi is slowly becoming more popular. My Father's Korean friends first introduced me to Kimchi as a child and I loved it. Later in life my Korean friends would invite me to their home when their grandparents were digging up a kimchi pot from the ground for the season's first kimchi. Fresh kimchi is the best. The liquid it is in bubbles with fermentation making it taste even better! Today, I usually eat kimchi for breakfast every day to give me energy all through the day.
I like the juice when it's fizzy. I'm supposed to limit sodium in my diet so I usually have to eat just a banchan portion but I could honestly eat a whole jar LOL.
Mama was really, really enjoying this and it was so wholesome to see, since he is always a very honest man! I was surprised by how many of the villagers liked kimchi, I had always taken it for an acquired taste, but then again, I am from a completely different part of the world. I'm glad they enjoyed it, with the rice and all the spices. Mehboob mentioned that in mango season, it's common to eat mango and plain rice in Pakistan, and I think I would very much enjoy that. Kimchi is actually fermented, not pickled. Of course I love it in Korean food (especially kimchi bokkeum, which is a sweet and spicy stew), but it's also great to put in other dishes from around the world. One of my favorites is putting kimchi and strips of beef in mac n cheese. Many people would be surprised, but kimchi and cheese (especially cheddar) are actually fantastic friends.:D
they would be Supprised to learn that KIMCHI is RAW and not cooked. the tender vegitables come from Natural Frementation. it lasts a long time and helps with Digestion. its best to use NAPPA cabbage as its tender and crisp , with Large leaves . but, you can Ferment any cabbage , even RED or GREEN cabbage.

Y'all need to try Pakistani achar (pickle). Mango pickle, carrot pickle, pickled Assyrian plums, lemon and chili pickles are commonly eaten in Pakistan. Pakistani pickle is very spicy and has a really really strong taste.

Kimchi can be cooked, it's eaten on the grill when people grill meat. Or cooked into dishes like Kimchi fried rice, soon tofu, stews, and cold noodles. Korean dishes involves other side dishes other than Kimchi, either fermented/pickled or glazed, and has many flavor profiles other than sour and spicy. Having Kimchi with variety of grilled meat in a lettuce wrap is best. On a lettuce you put a slice of grilled beef, Saam sauce, grilled kimchi, thinly sliced garlic, and you eat it in one go by stuffing it in your mouth.

Kinda wished they had also given them grilled, fried, soup, and stew versions of the kimchi. Different ways of cooking it changes the flavor profile and it seems a shame they couldn’t have experienced that. I personally like it raw when freshly made and cooked when aged.

My father took a turkish guy to the local Koreans. They were so kind and he too! They kept serving Kimchi and he kept eating. They got a bit scared because he was sweating like a slave. But just put a fan next to him and kept serving. Gladly my father cleared things up by saying that not ALL Kimchi of the restaurants must be eaten.

Kimchi is so delicious, especially cucumber, napa, and radish, but it smells like a dumpster. No matter what vegetable, the fermentation that preserves it and makes it so healthy and tasty just gives hot garbage smell. My ethnic heritage should make me like sauerkraut, but I like kimchi a lot more.

In Korea, they bury large clay pots loaded with Kimchi for a while before it's served.
Kimchi is often cooked in braised dishes, soups etc. Kimchi Jjigae (stewed with pork belly) is one of my favourite dishes.

Cut the cabbage in long, thin slices and cook it in lots of butter. We call it cabbage noodles. Tastiest cabbage ever.

Homemade kimchi is one of my biggest weaknesses 😍😍😍
Kimchi is so delicious, especially cucumber, napa, and radish, but it smells like a dumpster. No matter what vegetable, the fermentation that preserves it and makes it so healthy and tasty just gives hot garbage smell. My ethnic heritage should make me like sauerkraut, but I like kimchi a lot more.
