Korean BBQ Meatballs

  • These Korean BBQ meatballs are juicy and packed with flavours. Both the meatballs and the sauce have Korean gochujang paste which gives them a wonderful and different flavour. This meal is perfect to go with a bowl of rice. Try!

    Korean here - other than the extortionate amount of sugar (and we’d probably use part sugar and part mul-yeot) you’ve nailed the Korean flavours. But rather than coriander, you’d be more accurate to put spring onion as garnish - coriander does not go into any traditional Korean dishes and you’d find that more people dislike it than the other way around (don’t look at me, I’m a coriander addict).
    I’ve never thought to put gochujang into the meatballs so that will be exciting to try. I have all the ingredients in my kitchen right now, so looking forward to making this for dinner tonight!

    Good recipe!! I tried it with precooked frozen meatballs and skipped the cornstarch slush. Came out perfectly! I also drizzled some sesame oil at the end and 🤤. Thanks for sharing!

    Is the rice medium grain or long grain? Is it normal for Korean cuisine to use longer grains?

    Do we NEED the Korean Paste/sauce? Is it just for spiciness? 😭 Can I do without the paste or does the recipe need the paste/sauce?

      Well the gochujan gives a lot more than just the spice... It gives a lot of saltiness and umami to the food. I have made chicken meatballs many times with gojuchan and it has paid off. Just don't cook with a white shirt, because the red chili colour will not wash off :P

      It’s a very specific flavour, so if you were to make it, it would no longer have anything to do with Korean flavours. So if you were making it with the intention to have it be Korean (e.g. planned to invite people over and serve ‘Korean’ flavours), then it wouldn’t work.
      But as just a meal, you could def substitute it, no problem - just remember that gochujang is a VERY thick paste, unlike chili sauce, so you’d have to manage your measurements right.

    Any substitute for the gochujang paste can't find it anywhere?

      You can use sriracha, adjust accordingly since it’s a bit spicier than gochujang.

    I went to the store and there are two types of that paste, one is a barbecue and one is a sweet and spicy I think, which one do I get?

      I bought the spicy and sweet for this recipe. There are different levels of spiciness, so buy according to your taste 😄. Hope it helps.

      @@sorayaalberts7288 While that person above was being a bit snarky, they are also correct. The thing that makes this “Korean” is the paste, so there’s not really a good substitution. You might try meatballs with tomato sauce, some kind of gravy (like Swedish meatballs), or maybe a homemade bbq sauce.
