Best and Easiest Tomato Soup Made from Tinned Tomatoes

  • Warm and rich but made from the humblest of ingredients. Turn a few tins of tomatoes and pantry basics into a delicious and satisfying meal. The trick is tinned whole tomatoes (I used a mix of whole tomatoes and cherry tomatoes) and time.
    Tomato Soup
    1 tbsp butter
    1 onion - diced
    3 - 4 cloves of garlic - roughly chopped
    salt and pepper to taste
    2 tbsp tomato paste
    3 x 400g tinned whole peeled tomatoes of choice
    2 cups vegetable or chicken stock
    optional - grated parmesan to garnish
    Melt butter in a large saucepan.
    Add onions and sauté for 2 - 3 minutes.
    Add garlic and sauté for another minute.
    Add salt, pepper and tomato paste. Stir constantly for a minute and then add the tinned tomatoes.
    Squish the tomatoes.
    Add stock, stir to combine and bring up to a boil.
    Reduce heat and allow to simmer uncovered for 1 hour.
    Remove from the heat and allow to cool for a few minutes the using an immersion blender, blend until smooth (about 3-4 minutes)
    If your tomatoes are not peeled or if you don't like seeds in your soup, pour through a sieve to remove.
    Taste for seasoning and, if needed, reheat before serving.
