One reason why they put sugar in last is because sugar is an hygroscopic substance; it absorbs water. It makes it clumpy. It for ex.: sugar takes moisture from eggs in a recipe, so eggs and sugar are most of the time last so you have less clumping in your dough because you probably have to mix it immediately after adding. There was no egg in this recipe but sugar even takes moisture from the air, so it's best to add last so it doesn't "stay still" out of the package for too long before mixing everything together. It's not that it will start clumping after being 5 min out of the package, but the recipe doesn't know how skilled and fast you are 😅 baking is on a molecular level!
