Dear Hoon, I see a scale on the grinder from 0 to 60 and you use the „special espresso burrs“ and all that gives to you us to dial in between 3 and 7? Would one expect a somewhat larger scale to dial with „special espresso burrs“?
When I use my Ceado single dose and and over extract it's never bitter and when I under extract it's never sour! It could be those 83 mm Flat burrs.
Technically speaking Burrs for Filter are designed by geometry to grind particles of certain grams to make super long ratio drinks like 1:16 in filter
espresso burrs are designed by burr geometry to make particles that make ratios of 1:1 to 1:2 drinks
so TECHNICALLY speaking burrs do play a huge role in your cup

I kind of wish they reworked the aesthetics of the Niche for this one. However, it does seem faster. Then again, that is not surprising because it's a flat burr grinder.
