Had one come out with really crispy skin, when done on the Green Egg. Been struggling with the crispy skin on the others. i don't want to remove too much fat so the thing gets dry. I'll put one on for Thanksgiving. Gonna research that bird! Yours looks good.
I use a corn cob holder, every 1/8th inch or so. Helps to get the rub in real nice too, could use an injector needle but I feel like that doesn't spread it out enough, personally. And instead of Yoshidas I used a bit of Dales. Love your videos though man keep em up!

Using a tack to make pin holes is a great idea! Using our Cherry Habanero Sauce to finish the duck is an awesome idea- tons of flavor with the oranges and sauces and duck is such a great meat to smoke! www.silvertonfoods.com
Sorry, but why don't you use rubbergloves, when you're handling the meat? Personally, I always use gloves when handling meat, especially for hygiene reasons...🎅
