I wonder how they recovered this piece of music actually. I thought they didn't have the notation we have today, so is this just an approximation of how it might have sounded?
They actually had a fairly accurate notation system called mensural notation. It's very similar to what we have today as it was possible to write both rhtythms and melodies in defined intervals. Back then they had 3/4, 9/8 (triplets), as well as 2/4 and 6/8 (triplets) measures and a tonal system that basically matches ours. Before this piece was created only primes, fourths and fifths were regarded as consonant or harmonic. The rates of frequencies of these intervals were found out way before that by a friendly dude you might have heard of called Pythagoras.
Good question. It seems that this type of music was beginning to be notated by the time of de la Halle. So whether this music is exact or an approximation is still a question, I guess.
While it's true that mensural notation was starting to be developed around this time, I don't think Adam de la Halle would have been using mensural notation as we see in the ars nova. Earlier forms of rhythmic notation used in the 13th cent came in the form of rhythmic modes that were implied by certain repeated patterns of music. In a more general sense, you are also right to wonder what is written and what isn't. Instrumental parts were generally not written down in pieces like this, just the melody line. We know that there were instruments playing because music is described and depicted in paintings as having instrumental accompaniment that would have been improvised. This makes performance practice very interpretive

Ex. today balkan, russian, slovak, afghan or indian tonalities. But medieval is unique. It imposes some mystique atmosphere. Both celtic like here or gothic in machauts 14th century has this mystical atmosphere. The change came in 15-18th century to the dur moll tonality. I personally like more the medieval style.

It seems too much of a coincidence that Robin and Marion were not the legendary Robin Hood and Maid Marion. Yet the time line is very strange as Adam lived within the reign of Henry 111 and Edward 1 , two of the nastiest English kings who were constantly at war with the French. They did both have French wives so Im guessing at some moment of peace, perhaps a wedding Adam was summoned to write a song linking a feisty English folk hero with a noble woman of good manners (ie French). It seems too much of a coincidence that Robin and Marion were not the legendary Robin Hood and Maid Marion. Yet the time line is very strange as Adam lived within the reign of Henry 111 and Edward 1 , two of the nastiest English kings who were constantly at war with the French. They did both have French wives so Im guessing at some moment of peace, perhaps a wedding Adam was summoned to write a song linking a feisty English folk hero with a noble woman of good manners (ie French). This is just a guess I have not a jot of proof
