All I'll say is that I've learned tricks in Photoshop through the amazing teacher that's you and I knew the double exposure from you you are an awesome teacher
I repeated watching the period at 7:17, in the linear dodge blending mode, all the contents will be revealed at this layer if it is more brighter than the layer below. In other words, the two layers will compare with each other and the final result depends on the brightness(darkness) of these 2 layers. Thanks !

I got up to 2:56 but instead of the background turning red it was the dog's head that was red. How do I fix that?
You probably selected everything except the dog. In the Select and mask panel, try to click on the invert button (bottom right).
there is no red background color when open refine edges?
You have a View Mode on the top right. If you select Overlay, you'll have that red background.

You could keep the color of the trees for example. Try it. You just skip the desaturation step.
