How to make Mozambican Peri-Peri chicken | Braai recipe| Grilled chicken recipes | Piri Piri Chicken

  • You don't have to travel to Africa to experience the flavors of Mozambique. We've created a recipe that can accommodate everyone's taste. Those who like things on the spicier side of life, can add a lot more chillies. This bird has fire, zing, and a whole lot of attitude.

    Recipe
    ∙ 1 Whole chicken
    ∙ 1 Medium onion
    ∙ 1 Red bell pepper
    ∙ 1 Sweet Palermo pepper( Substitute with 1 red bell pepper)
    ∙ 1 Lemon, zest, and juice
    ∙ 10 Garlic cloves
    ∙ 5 Bird's eye chilies
    ∙ 2 Cayenne chilies
    ∙ 3 Bay leaves
    ∙ 1 tablespoon Dried paprika
    ∙ 1 tablespoon dried oregano
    ∙ 1 tablespoon Brown sugar
    ∙ 1 cup Canola oil
    ∙ Salt & Pepper to taste

    Nice! I have been making my own Peri Peri sauce here in the USA for decades now. I can find Nandos in specialty shops here, but it is not nearly as good as fresh made. I had no idea.

    Question: At the end of the video, is the peppers mixed with the salt meant to infuse the pepper taste into the salt? Or are the peppers meant to be eaten too?

      Hi! The chillies ( Bird's eye) was for decoration on the salt. You can infuse the salt with the chillies by grinding first and adding them to the salt. Thank you for watching.

      Correct me is true that peri peri was initiated by the Portuguese community in South Africa and then went back to Portugal not the other way round 🙏🏻 thanks guys for sharing this recipe that I love to eat with garlic sauce and tabouleh fusion cooking of Australia 🇦🇺🇿🇦🇳🇫✌️

      Piri-piri is Mozambican. Even the name is Mozambican not Portuguese. Actually Portuguese people in Portugal don't eat much Piri-piri.

    Nice vídeos, but as a Mozambican i gotta say you took a lot of liberties with this recipe. And I mean a LOT! We don't use black pepper, sweet chilli (due to scarcity), onion on our seasoning for chicken and we DEFINITELY NEVER use sugar in our meat/fish/poultry. Sugar is reserved for desserts.
    P.s: We would dip the chicken on the sauce and not paint it. Cheers from your newest subscriber

      @@smellsamazing quando voçê diz escassez de pimenta-do- reino, parece até que em Moçambique sempre produziu-se pimenta. E nem salsa tinha aqui em Moçambique. Nós aqui só assavamos frango com sal e um pouco de óleo e olhe lá. Os portugueses é que introduziram o piri-piri, e a salsa um pouco depois da independência. Acredito que o chefe aqui do video quis modernizar o frango simples de Moçambique para um outro nivel. Desculpa qualquer coisa🙏

      Portuguese colonists created this sauce on the Mozambican coast with the African Birds Eye Chilli that was culitivated by Africans. It's not a dish that originated on the mainland of Portugal. These people created an amazing cuisine that was particular to Portuguese speaking Africa, like the prego and trinchado. These colonists eventually either moved back to Portugal or settled in South Africa, where much of the food survives in what is now called 'Portuguese Taverns'. These taverns serve traditional mainland fare like bacaloa and caldo verde but also food unique to Africa.

      And that chicken fat will rendered out, on the hot bbq.
