Hi, I'm from Chile and we eat a lot of quinoa, it's such a great ingredient. I use it sometimes instead of rice because it has a lower GI (Glycemic index), that's good to loose weight. The only thing is that you have to wash and rinse quinoa always before cooking, and then preparing it like rice (1 part quinoa, 1 1/2 parts boiling water, low heat and the lid on for 20 minutes). I make an awesome quinoa tabbouleh, also have eaten a "quinoto", a risotto made with quinoa.

Alrighty then. Got to be a helles! A lovely, robust lager with ldry citrus flavours to match the lemon, chilli and such, and to cut through the quinoa and avocado. Only one though - it's breakfast.

Kick it up a notch and add toasted chick peas, fry chopped red pepper, yellow pepper, garlic, half sweet onion, chop 2 jalapeño, no seeds, add cooked corn fresh off the cob. Add 2 tbsp of Slap your mama spice. Stir into quinoa

Quinoa is possibly available fair trade. Ive never used it, but, if I did I wouls certainly search out a fair trade source. This looks delicious, Jamie! I make pretty much same except use rice and cook it together with beans. Then top with avo, tomato, salsa and fried egg :)
Hey everyone! I'm from South America and one very important detail, you HAVE TO, ALWAYS, rinse the quinoa before start cooking it.
If you don't, you will get a lot of bitterness in the mix.

From Peru, came here looking for some fresh recipes after watching David Goggins. Thank you Jamie, back to my roots... To think that in Peru when I was a child, only the poor will eat it. I grew up on it ;-)
Quinoa also works well with lime and mint, we've nick named it Mojito Quinoa in our house.

Jamie, I love Food Tube, keep up! I live in Chile and never seen a meal like this in my life, in fact in my country are not used black beans, nobody around here likes them, I think they are used in Mexico, which is located in North America and also used in Brazil. On the Quinoa, I'd like to give it a try, never thought you can cook with it, always heard about it as a medicine. I guess this meal is obviously an invention of yours, congratulations. Cheers from the southern part of South America.

I love to make a breakfast/dessert with quinoa, canned peaches, dried cranberries and coconut milk. Very tasty as well!

quinoa is a seed. not in the cabbage family saw a special on ng very interesting. now able to buy here in my area of mexico. we love it. mixed with oats during the winter with fruit for a great hot breakfast. also diabetic friendly. thank you Jamie, watch you everyday. diane in mexico
I finally made this with high expectations and half way through I thought - I use these ingredients all the time and living in California, I make some type of Mexican breakfast regularly - so why would I think this was going to be different? WOW, was I surprised! This is delicious and somehow totally different from my usual combinations of the same ingredients. I didn't have mint so I'll try that next time and the only other thing I changed was instead of the lemon I used a whole lime and the zest too for the quinoa. The sheet pan isn't necessary if you do 2 parts water to 1 part quinoa, no draining just cook 15 to 20 minutes till it absorbs the water and then set aside covered and it will get all fluffy, then just add the citrus right before serving. The chiles in the vinegar mixture were life altering and I will use the black bean technique over and over again. As Jamie would say BRILLIANT!!

Yes quinoa is the best alternative !
You might want to advise people to check the package of quinoa -- because if it hasn't been rinsed before selling, you have to rinse it before cooking it. Saponins on the outside of the grain make it very bitter if not thoroughly rinsed. Much quinoa nowadays has been rinsed before packaging, but a lot of packages still instruct you to rinse it off -- and you really need to do that if it says so. You really won't like it if it isn't rinsed.
Oh -- and it originally came primarily from Ecuador.

Oh by the way... Quinua or Quinoa .. need to be washed ... it has natural bitter flavor... wash it on a sifter at least 7 times or until water runs clear... another tip bring water to the boil and add the quinua for a couple min then drain the water reserve the quinua.. once again boil some water and add the quinua which was previously boiled until cooked. This will make sure the bitterness go away. And will taste so much better...

First up, the new look is good, a bit of stubble and darker hair :)
I think I will take a few tips out of this recipe for my baby shower brunch although with less chilli due to, you know, being pregnant and refluxy and stuff. Also, the quinoa - SOAK IT FIRST. The bitter saponins will really reduce your enojoyment otherwise. Soak, rub it around, give it a good rinse. If you have time, a 24 hour soak before use will reduce phytic acid and make the minerals easier for your body to absorb.

I agree that people need to chill and open their minds. Many South American countries (ie Argentina or Brazil) have very multicultural societies who origins can include Indigenous, Spanish, Italian, German, Portuguese, African, Indian etc... There is not one continent in the world that doesn't have global influences in it's cuisine today (after all we are a global community, and STRONGER for that).

The concern is that previously this was a very inexpensive grain for locals to buy as a staple for their diet. The greater the international use, the higher the value of the grain and this affects the availability of this grain as a staple for the indigenous groups.

Goooo JO!!! Another good one. Bit ott with the chilly but who am I to argue with your recipe. I made your bacon sarny for breakfast and your ministry of food Sunday roast chicken - very nice indeed! I'm going on holiday with some friends and family (including young kids). They are not the most adventurous of eaters. Any suggestions as to what to cook? I'm thinking chicken burgers, chips and salad. Do you have any recipes or ideas? Ps love the show!

Quinoa is one of the few complete proteins. great for building muscle. add it oat meal and some mixed fruit pieces with banana puree for breakfast and your talking the best start to the day that a human can eat.
