📖😋🔪 Lemon Chicken Pasta Ingredients:
1/2 lb pasta of your choice, I used spaghetti
1 lb plant-based chicken breast, super firm tofu, or 2 chicken breasts (butterflied)
1 tbsp chopped thyme
1 tbsp chopped oregano
1 tsp salt
1/2 tsp pepper
1/3 cup all-purpose flour
4 tbsp avocado oil, plus more as needed
3 tbsp unsalted butter
3 to 4 cloves garlic, chopped
1/3 cup white wine
3/4 cup vegetable or chicken stock
1 lemon, sliced
Salt and pepper to taste
1/3 cup nutritional yeast or shredded Parmigiano
1 tbsp chopped parsley

It's a double edged sword. Firstly that grocery produce aisle costs a lot of money and labour to grow/ upkeep. Secondly one of the drawbacks is when you live in a remote area you don't have access to niche ingredients.

Made this twice and it was a hit. My niece’s boyfriend had a lot of allergies. And cheese is one of them. It was my very first time to use a nutritional yeast as substitute. I think you and I are on the same wavelength lately - I just received 50 natural plant luffa sponges so I can clean my dishes for the rest of the year (1 sponge/week). And, I've been on a lemon kick, last night I made Ina Garten's Lemon Fusilli w/ Arugula. Your video came just in time - I have so many lemons in my fridge! The pasta looks like it came from Costco, but where did you get the plant based chicken breast? And don't worry for not being 100% plant based. I'm a lacto-ovo vegetarian - no one's perfect. It's a journey and we try the best that we can.

We would love to and that's a fantastic idea. But we realized that to keep this house & the farmland as a vacation home, it's waaaaayyyyyy too much work to maintain, especially while traveling the world. We are sad to leave Hawaii too 🥲
