Mark Wiens recently had a video with black pepper crab, and I thought--that sounds like a very interesting sauce--I wonder how you make it? And now I know, so I think I will try this over the weekend!
After seeing lots black pepper and Garlic, I was already thinking this is gonna be delicious :P I really like garlicky and peppery stuff :DThen it got to the cilantro... Does cooked cilantro taste different to fresh ones? To me, cilantro has a buggy taste :/ I have tasted bugs before and they're alright but I just don't like the taste of bugs on other dishes :/ I know I can just skip it in this instance but cilantro is such an integral part of Thai cuisine that it can't be missed off :/ But since most of the time, they're cooked by using the roots or they're slightly blanched, maybe heat can change their taste?
With all the sauces and such that you use. Do you refrigerate them all? I have a friend who does allot of Korean cooking. And so much of her stuff is kept in the pantry. She's had no issues. But I'd worry about things going rancid.
+James Buchanan I call these prawns because that's their official name, but most of the time I go with shrimp. If they're really big, then I start calling them prawns, but really...it's pretty random for me :)
I've only ever been served onions with seafood because my mom taught me so. I tried garlic with salmon once and it was not pleasant. I guess I have to broaden my horizons!

Cooked cilantro will not have the flavour you dislike (I think) so give it a go.

unfortunately there isnt really a substitute for Chinese wine. I've made this using water instead though and it's still delicious
