Just leaving the door open doesn't appear to be an accurate method for controlling temps. What about cold smoking options? Cant wait to see some good BBQ coming from this pit.
I’d like to see a few hooks on some of these for cold or hot smoking sausages. In general, offsets are a bit tricky for me when cold smoking as the top always runs hotter.
I run a 24*65 elevated Shirley. If you build a ladder with your splits you don't need charcoal you can use a weed burner. Also you can save leftover butcher paper to put under the wood for future lights with the torch.

Man you could smoke a whole cow in that monster at one time. Do you come to kc bbq compation That bbq grills big enough to feed 1000 people all day long. Now you need a fridge on the back of the pickup truck they use to deliver meat with. Oh and a mini truck with spices and bbq sauses system on it. You might be in Texas but we put bbq sauce on our meats in kansas city. You could take flavor profile for each region of the country back east its pork, midwest like kc its everything, Texas its beef Alaska it salmon.
You might be better off using a electric paint sprayer to season the smoker that dam big, after 5k pumps your hands got to hurt. Paint sprayer just pull trigger and aim. You can adjust the coverage Just but a cheap sprayer and only use it for your spray souloutions for grill preparation. You could heat the meat renderings up in a microwave to keep liquidity enough to spray. Wash it up with super hot water and salt saloution

I have a 750-gallon Yoder smoker trailer. I use a flamethrower to start my pit. Actually, it's a firestarter nozzle on a long hose that attaches to a propane tank.
I heat my pit (36” 3 door) with a propane weed burner then use wood once the steel is hot. This has saved me a significant amount of money over the years.
Joe, your an Animal. Wow 👌 thats a " No Fool'in Around" Smoker ! Here in L.A. there are people using big tanks to make smokers, but, nothing like Your's. Top Notch there. You should Proud to roll that Big Puppy around. Be careful towing with wood baskets full, might be lop sided ? I'd load all my wood and accessories right in smoker to travel to competitions. Extra slepping I know, but. A balance trailer is a mudt on a long hall...Can't wait for video of your first cook on that bad boy ! Gonna be Great for sure. Good luck on Hot Truck Project. I use a small bed of coals before I put a split on. Then I use a gun similar to yours to light them. I have an Oklahoma Joe smoker I bought when I was new I did not season it properly. I used about 15 splits to do a 13 hour cook last week. Is that about right in your opinion? I also noticed that my gauge is up top would show 300° but it was actually about 180 at the grate. I think I’m going to start running a little bit hotter. Your thoughts?
I don't believe there is as far as functionality. You'll have people on both sides of the fence claiming one is better than the other. I've cooked on both and they both cook the same. 👍

I've always done brisket fat cap down. I see you like the fat cap up. Will smoking the brisket with the cap up create a better bark on the bottom on the grate?

I use lump, I used to use briquettes. But that lump makes a great bed!!

The bottom racks need angle iron welded around , just like the top racks to prevent sagging. That will come with heat and weight of the meat .
