You can do a 65% hydration. 100% of the flour = 65% of water. :) turn the oven to high until you reach 800 F temp. Then set it to low, from that time launch the pizza. Avoid cornmeal, use rice flour instead if semolina is not available. Hope this helps
Just melted butter spread over the dough, and a 50/50 mix of cinnamon and sugar sprinkled over the dough after butter. And the cream topping is milk, sugar, and a little vanilla extract. I don’t have those measurements - just add some milk, then sugar, and a few drops of vanilla and whisk it until it looks right. Add more of any of those 3 until it looks and tastes like what you want.

I haven’t measured, but it’s not bad. I’ve used it on a lifetime plastic table with no problems.
