    My ancestors come from New England. “Chowder” to me is thick and creamy because of the addition of POTATOES… SO… I cut the cornstarch in half, peeled a baking potato and cut it into small chunks and cooked it until soft in the coconut milk. Then I took a stick blender and blended all until it was like hot creamy velvet. It added a WONDERFUL mouth feel to the delicious recipe you have invented (and you know what we say about texture!). It was AMAZING!!

    You could put a diced apple in the soup instead of fennel. I put one in my curried chicken the other day and it turned out great!

    So glad to be living in a time when these ingredients are more readily available. Even 20 years ago curry was considered an exotic ingredient and most American chefs weren’t utilizing it nearly enough!

      I was born in '61 and grew up w my Mom making shrimp curry for special occasions. Sadly, he cookbook got lost during a move and I was too young to have memorized the recipe. I am hoping this is the ONE, but made into a curry. I SO miss that dish and it's been like 30 yrs ..

    With the wind blowing 90 to nothing from the north driving snow deep into your skin like little ice daggers, no better way to thaw out than a good hot bowl of soup inspired by my favorite chef! Around here, superbowl had to wait because the horses and other livestock could not. Thanks again, Chef Jean-Pierre!!!

    My mother in law, cooked on a Ranch during the Depression.
    Her recipe is similar to Chefs,' she called her recipe "Corn Chowder," she served it along side with fresh home made bread.
    When you cook for hungry ranch hands, it better be good & hardy.

    A hint for mise en place:
    Deli containers!
    They come in different sizes, from 1 cup (1/4 liter) all the way up to 1 quart/liter; a single sized lid fits all of them; they're quite inexpensive; and they won't break if you drop them.
    I'm kind of surprised that Chef J. P. doesn't use them.

    I often do something similar, but I put potato pieces there too, and some cauliflower pieces also work nice. Water chestnuts could also add some texture to this type of soup. Potato is handy, because some can be added early, and they naturally provide some thickening effect. More potato pieces can be added 10-15 minutes before it's finished, and thickened to perfection simply by smashing some of those pieces. I don't think there's any right or wrong in doing this type of chicken soup, one could add cooked white roux, or add flour through sieve straight to the soup some time before finishing it, for thickening.

    What I like about this recipe is that you can go crazy with the vegetables in there. You can throw almost anything in there. Peas, brokkoli, cauliflower, green beans, potato. It all works in a curry. The potatos especially, if you use extra starchy ones it'll make it nice and creamy.

    I tiny bit of butter at the bottom of the bowl, then you pour in the hot soup on top chef JP! So it won’t separate and you can reheat the soup.
    That’s what I would do (I put butter in everything) you are a man after my own slowly clogging heart ;)

    Soup is one of the most underrated dishes out there. Many restaurants have it on the menu, but almost as an afterthought. I still remember almost 20yrs ago having lunch at the CIA School in Poughkeepsie, NY where one of the items was a 4-soup sampler. I would have ordered 3 of those had I known how good they were going to be.

    Curry 🍛 ... I'm out! But I'll like the video anyway. My mom went to school in Singapore 🇸🇬 and she used to make this a lot with curry puffs. I'd come home from school, smell that curry, and immediately drop my backpack off and run to my friends house for dinner 😂
