Crispy Pork Belly

  • Hello everyone,
    This crispy pork belly dish is a treat for everyone (except if you're on a diet 😅 ) the prepping does take a little bit longer, but it's worth it. Basically, you will be seasoning the meat 13 - 24 hours in advance and you also treat the skin side with vinegar and coarse salt, so that the skin gets nice and crispy when you cook the meat. For the seasoning I used :
    - grind black pepper
    - garlic powder
    - rosemary powder
    - paprika
    - salt
    For the skin I used coarse salt and vinegar. After leaving the seasoned pork belly overnight in the fridge, with the skin side on a plate with coarse salt the next day the cooking takes 1 hour plus 5-10 minutes. You leave the pork belly in the oven for 1 hour at 350°F that's 175°C, and the last 5 -10 minutes you raise the temperature to 500°F that's 260°C.
    For the last 5-10 minutes you have to pay attention don't leave the pork belly from your sight because the skin crisps up very fast at the high temperature, if you leave it too long it can burn very easy, when you see the skin bubbling and growing it's don and take it out from the oven.
