Lettuce is one of the first things you can eat from your garden.... spring is here! I look forward to wilted lettuce salad all winter!!! One of my very favorite things to eat ever!! Can't wait!!!
My grandparents were so frugal that the only lettuce they planted was Bibb lettuce because as a leaf lettuce rather than head lettuce it could be snipped with a scissors leaving the plant to further grow and provide more lettuce than if picked. We all got used to salads that looked more like confetti with squares of lettuce, thin slices of green onion, red radish, and tomato, in an oil and garlic vingear dressing. As for Frog Eye Salad , we used to make something similar with tapioca rather than spaghetti . To be even cheaper, we did not wilt lettuce, we used the bacon fat and hot cider vinegar with fresh picked dandelions in the spring, garnished with chopped scallions or onions, and slices of hard boiled eggs. YUUUM!
Egg in a hole was called frog in a puddle in my house. My parents grew up during the Great Depression, and continued the tradition of frugalness in the kitchen. Of course, with a family of 9, stretching the food budget was a necessity. One that I carry on to this day.
Slumgullium sounds like mom’s roulette stew. Whatever was left over from that weeks meals plus macaroni. Why roulette? It was a gamble if it was good or not. Only twice did she throw it out before we tried it.

I've eqten "poor man's gravy" all my life. When I was a kid, my mom made it with flour, butter and water. I still like it better than milk gravy
