I wonder if the extra time of aging in French Oak develops a more balanced palette where more fruitiness comes out with age vs predominant floral character from shorter finishing…
My thought is that it's all about the charred bit. I can't imagine too many French oak finishing barrels are charred. Could be wrong though.
