Mindy I got the call today. I am as of today 100% cancer free! I can’t thank you enough for your love, prayers and support through this. I have to give so much glory to God for blessing me with supportive people in my life, a knowledgeable medical team and for giving me the strength to fight through this. I know He has a plan for me and I know whatever it is He has planned is going to be beautiful. I still am not sure what that plan is but I know He will reveal all in His time. Right now I think all He wants is for me to rest, heal from the surgery and also heal my soul.

timestamp 13:15 - have you ever played dinner plate roulette? lol plate up all the leftovers as full meals and cover so noone sees which dinner is in what - label them 1-5 and then have people pick out of a hat for their meal, lol. always make a bonus meal that people can see in case someone wants to trade out their "Mystery Meal"
I don’t even plan for 7 dinners a week anymore. I found even using leftovers for lunches, I still was over planning. Most recipes were going 2 nites. For the most part I only plan 4-5 dinners a week. If I cook double and freeze half, I’ve got next months meals planned too. I’ve cut our food budget drastically last year. Enuf that I’ve reduced our food budget for this year even with higher prices.
I like your "everything out on the counter" night! It's such a good idea because it is all out there for everyone to see (like a party)! Loved this video! A lot of good ideas!
So you inspired me to clean my fridge, but I am 67 and overweight can't do things like use to., I got the door and shelves, so I have take mini break then I will do the drawers. Thank you, I did my pantry a few weeks ago, although I really need some of those baskets, and some of those those can good racks. Well maybe some day. The one good thing about cleaning my fridge, is I found 3 of my Alani energy drinks that I forgot i had. Yay for me. well I did get a little excited. Lol.
We have a set leftover night every Thursday, as trash runs Friday morning.
The kids love it, hubby does too & Mom sneaks off for an early bath 💚

I actually put it on my weekly ‘to do’ list to eat certain items that are reaching their prime 😂 This week I needed to finish a cucumber and some buffalo chicken dip, as well as eat a salad I had purchased on clearance at Kroger. I need a reminder to eat those things so I don’t wind up wasting food/money just because I may overlook them in the fridge.
One meal for the rest of my life: it would have to be a filet, baked potato and a salad 😅

Your video inspired me this afternoon, and I went through my freezer and fridge. With a half bag of frozen meatballs, open bag of chopped bell peppers, the rest of a chopped onion, a bag of frozen rice cauliflower, a tub of frozen mashed potatoes, the rest of a carton of beef broth, the rest of a tub of whipped cream cheese, what was left in two bags of shredded cheese, and a can of cream of mushroom,, I have just made the tastiest Philly Meatball Chowder lol. Sounds weird, tastes delicious. I also got rid of NINE packages from my freezer and fridge!

Great meal ideas. I love using everything up. I put small portion sizes in the freezer and they become my "bits and bobs". A term I learned from an Aussie friend.

I SOOO need to work on using up leftovers, and partially full things too. I find produce is my biggest challenge, using lettuce up before it goes beyond using. I really liked this video because you gave me some really great ideas to use some of what I have on hand up! Thank you so much!
The next time you make a grilled cheese sandwich, try adding a thin slice of tomato with a pinch of Italian seasoning before placing it in the pan! Yum!
So many great ideas! I did this all this week, it is working out great! I put a magnetic whiteboard on the fridge so I could write down all the leftovers that are in the fridge and ready to eat too, this helps with the "standing and staring" at the contents of the fridge🤣.

I’m doing a pantry challenge month thanks in large part to inspiration from your channel! Exceptions for basic fresh vegetables and fruit, milk, eggs and coffee as needed so we can be sure to keep a healthy balanced diet and stay sane but almost entirely cooking from what we have otherwise
I meal prep for Monday through Friday, so my weekends serve as a pantry/fridge/freezer clean out. When I am pulling out ingredients for meal prep, I write down any short dated or “need to use” ingredients so I can use them the next weekend.
I took your short cut of taking a grocery store dip but instead of mixing it with rotisserie chicken I mixed it with a package of tortellini! So good! Thank you for all your videos 😊
Happy New Year! I love this challenge. I accept. 🙂 It's sort of humorous. My husband and I were just talking about how long could we live out of our pantry ,2 fridges and one small freezer. There are 3 of us. I'm thinking at least 5-6 weeks if I make my own breads. Maybe longer but we will probably start running out of eggs and milk by then.
I drove my family and friends crazy for the past 35 years telling them to never ever ever go food shopping the day you need to… Always wait and be creative and it always works out and for the love of humanity stop shopping before a big storm when you are going to lose power and throw it all away
I have always thought that using up fridge/freezer/pantry ingredients challenges me to get creative in the kitchen. I will often google ideas as a jumping-off point but tailor it to what I have on hand. I find it fun and I most enjoy not wasting food and saving money.
Not everybody's plate has to look exactly the same is a great way to look at it. Using up good, leftover food that someone will enjoy just makes sense. We call it "buffet night" at our house. I think it makes everybody, especially kids, feel like they get to make choices. Happy New Year!

I keep an organizational bin in Gulf the fridge and in the freezer and I put everything that I've opened or is partially eaten or needs to be eaten soon in the bin so it really helps prioritize and avoid food waste.
I made turkey ala king with leftover smoked Turkey from Christmas Eve. Same recipe as chicken ala king
One meal for life....TACOS!! The possibilities with tacos and toppings are endless.
I love to make hash when i have meats and odd veggies. I used leftover ham and potatoes i needed to use and made hash. Added random leftover veggies and cooked some sunny side up eggs to go with it!! so yum!!

Lately I've been using various leftovers for breakfast bowls; just adding an egg on top.
I really need to clean out my freezer, so that is my main goal of the pantry challenge. I’m using what I can from the freezer to make room for the garden produce that will come this summer.

Great video! I have lots of leftover turkey meals coming up, and today I used my leftover cranberry sauce to make a Cranberry Chicken freezer meal. (I also make my own Catalina dressing for that recipe, to save money.) It feels so good to use things up!

I just did this! I’ve been watching your videos for quite awhile. I was inspired by an older pantry challenge you did and made my own enchilada casserole using some refried beans, black beans and enchilada sauce I threw in my freezer and some cottage cheese, sour cream and shredded cheese in my fridge - plus some veggies that were on their way out. I’m trying to not go grocery shopping in January and focus on eating what I have on hand, especially leftovers in my freezer.

I really like your leftovers potluck night, we had Pizza Saturday growing up.
Every week before I shop, I start with finding the items that need to be used up! It is an addictive habit! Saving money is paramount for us this year due to a likely job change that would reduce our income by around 25%. Ouch. Even though I work 2 jobs and come home exhausted, I find that being creative in my kitchen is energizing. We also have dietary restrictions in this family which can be challenging! ( No wheat, dairy, pork and low-salt.) I can almost NEVER make the recipes as you show them which is quite a pain. It usually means I have to buy more expensive options in general. However, I'm up for this!!
I love a good pantry challenge. I'm currently doing an Eat at Home challenge that Tiffany at LargeFamilyLove does. We don't eat out often, but sometimes we grab something small after a doctor's appointment. I truly enjoy watching your videos.

This is EXACTLY what we have done this week! I have a meal plan app called Plan to Eat and I’ve typed in what’s hanging in the fridge to be used up and we’ve made it all week without a grocery trip. Going to Store tomorrow night… after dinner…. To get the milk and eggs and bread staples but I think we need to be intentional in the grocery trip after our clean out challenge so we don’t overspend so I did a pick up order for essentials. I think it would be easy for your mind to tell you that you need this huge stock up haul which would then negate what you just did to delay going if that makes sense!
So that meal tonight…. Yeah got to the end of prepping it and then it turns
Out the open pack of cheese was MOLDY and I didn’t realize til I had dumped it all in it. RUINED! (I was totally in a hurry)….. grrrrrrrr…. Now I feel defeated and I’m out of food Lolol. Well I made it 4/5 nights this week!

I love this! I'm doing the #threeriverschallenge pantry challenge combined with a no spend challenge for January. I haven't gone grocery shopping since before Christmas and have even managed to do make some freezer meals for myself and freezer meals and baked goods for my brother and sister-in-law who just had their first baby. I will likely do a small mid-month shopping trip for eggs and some fresh produce, but even two weeks in I am finding more potential from inside my pantry and freezers.

Growing up, we called leftover night “Grab and Growl”. I’m the oldest of 4, my mom was getting her teaching degree and her partner watched us Friday nights when my mom was in class. You had to call dibs on what leftovers you wanted and I also made buttered noodles, instant ramen, or pb&j for whoever wanted.

I’ve done some grocery shopping and purposely looked for good prices on typical products. Lidl had butter 2/4 and a great sale on bacon. I had to change brands but I found products that fit the bill for the same price and in one case 2.00 cheaper. Looking in a different section of the store worked too. Nuts I found cheapest in health food area but were found in two other places.

I always have more month than money. The last week sees me rooting around for leftovers and almost empty boxes and bags to throw into a single pot. There's gotta be a catchy tittle for the monthly mystery meal.
Using random nuts that have been hanging around for a while in salads is my latest discovery. We ate through most of ours very quickly with salads and reduced waste so much!
I think I would blend up the potato corn soup
My favorite meal is breakfast, but I eat more than eggs or cereal for breakfast. I also eat rice with black beans or lentils with blacked eye peas for breakfast.

Have you ever addressed how you treat expiration dates with shelf stable foods? I firmly believe some things are still good to use even for awhile after. Just depends on the food.
USFDA has guidance on this. They agree with you and give guidance on how long past the best before date.
Our left over nights are called " buffet night".
