I always see japanese recipes using kabocha. Is it because kabocha is the most accessible one or because the recipe only works with kabocha?
Because kabocha is the only squash widely available here.

Yummy, now I have a way of using my homegrown Acron Squash. I checked for a sub for Kabocha Squash, and Acorn Squash is one of them.
