Aw Chef, this was a nostalgic video for me. When my mom had to travel abroad for her dad's funeral, MY dad took care of my brother and I by himself for the first time. And among the many mishaps during those several weeks there were a few instances of burned hamburger helper. Bless his heart. He passed away last month and I miss him so much. I also love beef stroganoff, so I think I need to try this out soon. For me, and dear old dad: Bob ❤️
@ A M, I’m truly sorry for your loss of your dad. This reminds me of years ago when my husband’s uncle would visit us every Wednesday evening. He never wanted anything else but beef stroganoff. Back then I made it with beef tips. And not this exact recipe, but pretty close. I haven’t thought about that in years. But it was such a small token to make an old man so happy. I’m glad I could do that for him.
One can substitute sliced potatoes for the noodles and reduce the amount of liquid a bit - I use two cups total of broth. I also make a roux with the broth separately and add it to mix when with the potatoes go in. Simmer until the potatoes are the firmness you like, stir in sour cream and serve. I've been making that recipe for close to 50 years.
I made this for dinner tonight! It was outstanding! My daughter Sophia and I make sure to watch your videos every day before she goes to bed! Thank you for the recipe and thanks for being part of our nightly routine!

The way you show us to cook the pasta in the sauce rather than in boiling water, as in the recipe for orecchiette and sausage, puts these dishes in another category! My family and guest adore it! The pasta absorbs whichever herb or aromatic you’re using and I feel confident to be creative. Always a huge hit and now I’m asked for’to go bags’ as my husband bragged how much more the flavors develop by day 2 & 3!
Not only did I eat Hamburger Helper pretty often as a kid, I also ate it regularly as a young adult when I moved into my first apartment! I even bought a 2qt microwaveable casserole for that purpose; it didn't shorten the cooking time at all, but it was less messy than preparing HH on the stove top.
I made this and it was easy and DELICIOUS. I love stroganoff, but it takes a lot of time to make so sadly is not usually a week-day meal. This recipe was a gamechanger, however. And the next week, I did pretty much the same thing but made a one-pan chicken paprikash. These were the changes I made: swapped the beef broth with chicken broth; deboned chicken thighs instead of beef; skipped the garlic, mushrooms, and vodka; added 1 tablespoon of paprika. Chef John inspires me to do real good food, real simple! ^_^

Growing up, Hamburger Helper stroganoff was one of my favorite foods (ok, it still is, but now days you gotta get the "Deluxe" box). I remember back when it came with the separate powered sour cream stuff that you mixed and added at the very end. But, HH introduced me to stroganoff in general and I think I've only ever had one recipe for it that I didn't love. So, happy to add this one to my arsenal of stroganoff recipes!
I learned hot to make hamburger stroganoff from a woman on a ranch. She used bacon ends and cooked the mushrooms, onions, and hamburger in bacon grease. Oh yeah :) Happy cooking everyone!
Nicely done John, looks amazing! From the midwest here and around my neck of the woods this was what we called Stroganoff. I honestly didn't know there was another classic version until I was almost 30. Typically I add thyme in with the meat mix and Worcestershire sauce and/or balsamic vinegar into the sauce near the end for a little acidity. Quite good either way!
I've been making ground beef stroganoff for a while now, and this looks like a great shortcut to get it all in one pan. Always hated having to cook the noodles separate. However, I would absolutely add some Worcestershire sauce!
Thank you for the reference to Fred Biletnikoff, the greatest small receiver ever. The man who could catch anything thrown at him. I was not a fan of the Raiders and almost hated them during their hey-day! But, with the wisdom of age I now have the greatest respect for that great team that Al Davis (couldn't stand the man) made. I almost revere Biletnikoff and the incredibly great Ken Stabler now, in my old age. Thank you for the great memories!

John. Thank you. Your recipes are really good. I have watched you since your beginnings and it has inspired me to cook many of them. My critical comment is this. Just because you love cayenne, does NOT mean it should be in every recipe. Be more judicious. Cayenne is not a one stop spice shop. For example? It has NO Place in English Salisbury steak. Also? Please stop quoting ground beef fat mixtures. In Canada, and much of the civilized world, we call it regular, medium, lean and extra lean. Percentages do not suss. I recommend you research that. Cheers and thank you for all you do. I have learned much.

Paprika is a great addition to this. As is diced bacon, which is in the classic Better Homes and Gardens cookbook. (which also uses cream of mushroom soup as well)

Another dish that I wax nostalgic is what my mother called "Cream of Mushroom Soup Chicken; it was the early 1970's, so I do not need to name the brand. All I know was chicken (thighs and drumsticks) and said soup were involved; baked in the oven, but time and temp unknown. I am not knowledgeable enough to attempt (i.e., I am too chicken to make this chicken) and my mother has been gone for 40 years, so I must seek knowledgeable sources (a search of the famous soul's website turns up zilch - are they ashamed of their major role in '70's cooking?). Anyway, thanks again for another great video! 20 minutes later: after I posted the above request, I decided to try yet another search ( because I'm stubborn that way) and, lo and behold! I found some recipes that are not exactly what I am looking for, but are close enough to give the courage to make an attempt. With that said, I would still love to see your version, if that is possible. Thank you, once more.
Sometimes my mom would make chicken breasts baked in a can or two of cream of mushroom soup or one bottle of italian dressing. It took just as long as it would take if they weren't covered in soup or sauce. Thank you for reminding me of what was one of my favorites when I was about five years old! :~)
My mom used to make the same thing and put Knorr onion soup mix in and stirred up with the cream of mushroom soup before pouring over the chicken. Usually put in oven at 350 for about an hour, give or take, depending on if it had bones .
My mom couldn’t help hamburger even with the box. She did a decent job with the Campbell’s cream of mushroom soup version of hamburger stroganoff though. My kids are unknowingly spoiled since I’ve helped hamburger from scratch for years now. Thank you for this lovely tie-in recipe :) 🤌🏻

I was really expecting a rhyming metaphor when it came to how small to break up my ground beef. The setup was there, but you kept cooking. Totally made up for it with a Fred Biletnikoff reference. Solid recipe, going to have to try this as soon as I pick up some sour cream.
I had 2 cans of Costco canned roast beef I wanted to use up, so went with those instead of ground beef. Added more mushrooms and used a 12oz box of bow tie pasta (more broth needed, of course). Omitted cayenne (wife too Scandinavian for that). Made it for my family and my parents, everyone loved it. A great recipe to add to the binder, tasted even better than what Hamburger Helper USED to taste like (chalky and inedible now). Thanks Chef John! Super good.
Had to go out and get a small bottle of Vodka but could only find a large one. I proceeded to make the recipe. But I didn't want all that vodka to go to waste so I made a nice vodka collins. Still a lot of vodka so I made a VO and coke. Then a Vodka Sunrise. Then I had to sit down because I forgot what I was making. Then I remembered and had a Vodka and soda. Now, the next day, I'm trying to figure what that was that burned up my dutch oven.

Hey there Chef John. Huge fan here... I just made this for the second time and I must say I agree with you. I love classic beef stroganoff but as of tonight. this one pan treat is my favorite. It was so easy to make and everyone loved it. For everyone out there that is reluctant to try it I say give it a chance and get ready to be amazed.
Alcohol is a great addition to basically anything you're gonna simmer, and the reason boils down to chemistry. Oil does not mix with water, which is a barrier in cooking. All sorts of flavorful compounds are oil based, especially in spices. This is why "fat is flavor," as the fat from the pan or in your food is what carries the flavors you've added. Meat and plants are water based, so it's going to take a long, long time to get any oils to penetrate into your food (my suspicion is that this is why many soups and stews taste better after a day or two in the fridge - those flavors get more time to mingle) This is where alcohol has it's place. Alcohol is special in that it's both soluble in water, and it can dissolve oils, meaning it can carry those tasty, oily compounds along for the ride when it penetrates into meat, veggies, and grains, where they get deposited as the alcohol evaporates (along with any flavors the alcohol brings to the party). The result is more flavorful food, which is always a good thing. The alcohol does need some time to penetrate and evaporate as it simmers, but a little splash of hard liquor or a few glugs of wine or a bottle of beer can really improve the taste of a soup or stew.
This is a family favorite around here. We serve it with ketchup and horseradish as optional condiments. SO yummy especially at this time of year. Thanks Chef John.

What a killer recipe chef John! So easy and so darned flavorful, and very few ingredients required. Used white wine since I didn't have vodka on hand, and it was still delish! Definitely listen to the video not just read the recipe, John's tips on what to "see" were very helpful on the first go❤🙏😋
I so love all Chef Johns videos and just made the Stroganoff…i was a little short on beef broth, so i used a package of Lipton Beefy Onion dry soup mix. I also tossed is a big handful of frozen peas…and had plenty of sour cream for those that really like it extra creamy…i was delicious and easy…. And NO… i refuse to buy Hamburger Helper!! Yumm! Lipton's is great for roasting potatoes too. I'm with you, I keep a bag of peas and diced carrots in my freezer for dishes like this. I typically don't use sour cream just to keep things a little lighter. The gravy is flavorful so we don't miss it.
I ate HH so much growing up, at least once a week. And probably half the dinners, if not more, involve ground beef in some way, shape, or form. In fact, to this day, it is one of the few meats that I will eat, simply because that's what I got used to.
Yay! This was one of those weeknight meals in our house when I was growing up. On the weekend mom would break out the steak and mushrooms instead of Hamburger Helper. Happy New Year Chef John 🎊🥂

I make this often. My secret ingredient is dijon mustard, rather than vodka. Yum!
This is similar to the recipe I've been using, except I also add Worcestershire sauce and dijon/brown mustard. Delicious either way!
That's practically barbeque!
Crème fraiche instead of sour cream too, if you want a lighter version.

A recipie for traditional beef stroganoff, I occasionally make from my aunt included cognac instead of vodka.
Adding frozen peas in the last 2-3 minutes when simmering is very good in this dish, plus you get the health benefits, vitamins, etc...

Hey there Chef John. Huge fan here... I just made this for the second time and I must say I agree with you. I love classic beef stroganoff but as of tonight. this one pan treat is my favorite. It was so easy to make and everyone loved it. For everyone out there that is reluctant to try it I say give it a chance and get ready to be amazed.

Alcohol is a great addition to basically anything you're gonna simmer, and the reason boils down to chemistry.
Oil does not mix with water, which is a barrier in cooking. All sorts of flavorful compounds are oil based, especially in spices. This is why "fat is flavor," as the fat from the pan or in your food is what carries the flavors you've added. Meat and plants are water based, so it's going to take a long, long time to get any oils to penetrate into your food (my suspicion is that this is why many soups and stews taste better after a day or two in the fridge - those flavors get more time to mingle)
This is where alcohol has it's place. Alcohol is special in that it's both soluble in water, and it can dissolve oils, meaning it can carry those tasty, oily compounds along for the ride when it penetrates into meat, veggies, and grains, where they get deposited as the alcohol evaporates (along with any flavors the alcohol brings to the party).
The result is more flavorful food, which is always a good thing. The alcohol does need some time to penetrate and evaporate as it simmers, but a little splash of hard liquor or a few glugs of wine or a bottle of beer can really improve the taste of a soup or stew.

My mother made beef stroganoff like this all the time. She boil the noodles separate. She added Worcestershire sauce and I used to like to put they still pickles on it.

What a killer recipe chef John! So easy and so darned flavorful, and very few ingredients required. Used white wine since I didn't have vodka on hand, and it was still delish! Definitely listen to the video not just read the recipe, John's tips on what to "see" were very helpful on the first go❤🙏😋
This is very much like a dish I make when camping, though instead of beef stock, I use canned tomatoes. Also very easy and yummy.
I so love all Chef Johns videos and just made the Stroganoff…i was a little short on beef broth, so i used a package of Lipton Beefy Onion dry soup mix. I also tossed is a big handful of frozen peas…and had plenty of sour cream for those that really like it extra creamy…i was delicious and easy…. And NO… i refuse to buy Hamburger Helper!! Thanks Chef John!!❤
Yumm! Lipton's is great for roasting potatoes too. I'm with you, I keep a bag of peas and diced carrots in my freezer for dishes like this. I typically don't use sour cream just to keep things a little lighter. The gravy is flavorful so we don't miss it.

I ate HH so much growing up, at least once a week. And probably half the dinners, if not more, involve ground beef in some way, shape, or form. In fact, to this day, it is one of the few meats that I will eat, simply because that's what I got used to.
