Dwarves are very fun and op aswell. I started in 1 county, east of Gundabad. It's all about building and developing. By the time I became an Empire, I was making over 100+ gold and dwarves are also quite interesting. They're stocky and durable so you can defeat enemies even while outnumbered. You can also loot Erebor's arkenstone and stuff. Probably the most interesting Dwarf start is in Moria. You can reclaim Moria, colonize it and there's even a "struggle" mechanic where you can fight the Balrog and have to be careful to not make too many actions otherwise it will wake up.
CK3 doesn't have any option to confederate? Like to threaten your enemy that is related to you, in this case, an elf, and if accepted, you don't need to go to war!
I think this mod it’s perfect having, would you do a campaign with Alfred the great? I think it’s great to have the chance to play the battles in Attila. Keep up the good work 😊

Gundabad! They have a large quest chain involving conquering the Misty Mountains and crushing Dale, Erebor, and the Elves

you can demand they become your Vassle I think
You can offer vassalization, but unless they’re a count or duke tier (or equivalent) within your de jure territory they’re likely to refuse
You usually do it via marriages.
