I need to make these instead of a pumpkin pie for Thanksgiving. I have my kids (who are grown) but they eat one slice of the pie and then I'm stuck with the rest. At least with muffins I can freeze them for another day or give them away.
That's a great idea! These muffins will freeze up really nicely... I don't know if you are into brownies, but I am going to put up a pumpkin cheesecake brownie recipe probably tomorrow. That may be a good replacement for your pumpkin pie too. Plus they are a small batch. Only an 8x8 pan.
