After a hurricane, I called my cousin. She had fish in her yard, that fell out of the sky, during the storm! Mirepoix! We just had our roof blow off the kitchen, no fish landed in the pan.

I love the way Martha intersperses French words with the instruction. Read Maigret by Simenon, and listen to his audiobooks, and television series. Never could understand French. Turn the audio speed to .75 and add the English or French captions. Love Bruno Cremer, and Georges Simenon. Love to hear the Simenon book reviewers hash out the stories. Just because I read it doesn't mean I understand it. After spending all night with a dictionary, translating a 5th grade level French story in college, my instructor said on my paper, "You crazy American! Why don't you read the story! F My mother said to sit on the front row, maintain eye contact, and smile. I was given a C, making Fs or Ds. One other professor, Stuttering Professor, who only gave out Fs and D's, after following mother's advise, assigned a graduate student to me, for all her courses. I then made As and Bs, as I was taught what to memorize. ( I have a non verbal IQ like my Dad's, three times higher than the verbal.) She also made me go through Stuttering therapy. My Dad, a stutterer, taught me how to talk. Make canned speeches, story telling. That's how I overcame stuttering. These comments are canned speeches. His stories we're roll on the floor funny! He was a super athlete, and meticulous map maker, and the very Best Dad, a stuttering kid could ask for. He would be 108. He visits in dreams. I was spouting off to a sibling giving medical mandates, Liberty or Death! He visited wearing Irish sparkling and sparking buckles on his black paten dancing shoes, wearing a Statue of Liberty foam green suit costume, and uphold the torch! He is still encouraging and funny from the other side. Lift the Heart Like a Torch, and Smile!
Wondering why the recommended heavy-duty enameled pot was not used. She cooked everything in what looked like a lighter-weight stainless steel pot. I'm sure it came out delicious and was easier to handle.
The only slight change in my cooking experience is let the potatoes simmer in the juices for 40 mins instead of 25. The extra 15 mins give the potatoes richer flavor and makes them softer to chew. Also, I think she forgot to add the bacon bits earlier to the stew to give it better flavoring. Yummy !

It seems the enameled pot was reserved for the Coq au Vin, to go directly in the oven from the stove top.
