The problem with vegan food and cooking, is that a lot of times, you are trying to replicate flavors and textures found in non vegan foods and dishes. Purely vegan dishes can be great in their own right, but trying to get the same, or even close to the satisfaction of a traditionally non vegan dish, is very, very hard. I personally like meat and dairy too much to ever go vegan myself, but I respect those who do and I can definitely appreciate a well made vegan meal. But it's damn near impossible to fool anyone who regularly eats meat and cheese into thinking your vegan dish isn't plant/nut based

Braggs nutritional yeast on popcorn is really good we use that at my house every time we make popcorn. Every time we get someone to try it for the first time they really like it
The best vegan popcorn topping is Flavacol. Nowhere near natural, but vegan and what makes popcorn taste like popcorn and turns it yellow too! It may also kill a person.

Mushroom can be an excellent substitute for meat but you'll never mistake it for meat. I would have used a mix of mushrooms, seitan, and tofu skins, because the latter two would have a texture that could fool someone in the context of a Philly cheesesteak.

I do agree that when vegan food does its own thing it is at its peak. BUT the reason those mock meats are available is because a lot of vegans didn't go vegan because they hated the taste of meat.

Sure, margarine exists, but some of them are absolutely not vegan, so the Venn Diagram isn't a circle. At least with something actually labelled 'vegan', there's a much higher chance of it being something we want to eat. Plus, calling it 'butter' makes it a bit more accessible for people switching over. We're already getting vegan taxed, so why NOT call it butter like we call soy milk milk?

Hen of the Woods is a good mushroom but I like to use King Trumpet with Soy and Worcestershire sauce for my meat substitute. Since Worcestershire isn't vegan maybe subbing it for Marmite and miso will really bring out those flavors.

I work at Crossroads which is an entirely vegan restaurant (no I’m not vegan) and you’d be surprised at how amazing they can make vegan foods taste like real cheeses and meats, it’s actually mind blowing

In my experience, vegan cooking takes a lot of it's own practice, much like non-vegan cooking.
This. It's a high skill set. It took me a few years to get flavors down and ingredient combinations that even my meat eating friends enjoyed it.

I work at Crossroads which is an entirely vegan restaurant (no I’m not vegan) and you’d be surprised at how amazing they can make vegan foods taste like real cheeses and meats, it’s actually mind blowing
