Using jackfruit in the chili was an insane choice, there are so many alternatives they could have used that would have worked so much better lol
Yeah.. I’ve seen jackfruit used for pulled pork or bbq chicken sandwiches, and it works really well there because those *are* stringy, but chili? That’s a weird choice.
They could do some good stuff as vegan options.
They intentionally pick nasty recipes for the vegan items. Nobody eats jackfruit/maple syrup chili that looks like

The chili should've gone with a textured soy protein instead of jackfruit! I have never heard of someone using jackfruit for chili.

Yeah my partner is not vegetarian, I am vegetarian veganish, my partner developed a milk allergy, so we have made vegan meals many times because it is just easier to navigate, and honestly, they are so delicious! Most recently a vegan chili 🤤 now I want that again

i wish you guys used some store bought products for the vegan ones! like at least vegan cheese for the queso and vegan beef for the chili. homemade recipes can be great but when it's just like tofu/cashews/jackfruit then it's just too easy to differentiate. especially for something like vegan custard, it's not possible to get any egg flavour if you're just using basic recipes with cashews or vegan milk

Maple syrup... in chili? Im not vegan but chili is pretty easy to make vegan without tofu, maple syrup, and jsckfruit lol
I've appreciated some of these, like beyond or impossible burger comparions to beef where they are reasonable. But even just the opening to this episode bugged me, suggesting that hummus is an actual common use for vegan cheesecake and not just... vegan cream cheese?

Lets put straight jackfruit in a bowl and call it chilli and have them find the real "ground beef regular chilli"
I used to think vegan food was not good, but then my mom became vegan, and she make tons of really good food. Its all about preparation.
The key, for me, is not trying to veganize meaty dishes. Jackfruit can be good, if we would just stop trying to turn it into bbq or chili.

I'm not even vegan, but I have had a lot of vegan food over the years and particularly when it comes to the chili there are home-made ground beef alternatives that are damn hard to tell apart from the real thing and would have presented much more of a challenge here. This felt too much like easy mode.
I always think they'll use a vegan recipe that isn't made for a middle aged pinterest lady but they never do.
Right like there’s a million vegan substitutes for things and they keep going this route, why?

I don’t think non vegan/non veggie people know how to find decent vegan recipes. maybe it was just because I was vegan before the big boom that happened a couple of years ago, but I always had to go digging
If they used already made vegan substitutes the dishes would be much better. Like they make vegan ricotta, making your own is guaranteed to be gross. They also have vegan egg that they could’ve used in the custard
ricotta made from soy milk is actually very easy and good tasting- I like to use it in lasagna.
The mythical kitchen needs to hire some vegan chefs because I feel like they kinda fail when it comes to making alternatives. Jackfruit in chili?? Why not even just use impossible ground lol this episode was better than last vegan episode but still come on!

I thought it was neat how they had a couple vegan options. I think it would be neat to see their preference between a commercially available and a homemade alternative. I love the range of ingredients used in this episode, though!

As a vegan (for health reasons) who cooks a lot and goes to a lot of vegan restaurants, these episodes always hurt my heart a bit. There are so many ways to create similar vegan versions of foods, but I don’t think the mythical kitchen is there quite yet.
The whole idea of needing vegan food to mimic non-vegan dishes is also kind of silly to begin with. But it's all that most non-vegans are aware of. 😅
@@ZoeCalicooh yeah for sure, there are tons of dishes that are already vegan and delicious; I do cook a lot of those. but I also understand having a hankering for something you used to love before going vegan and wanting to recreate that experience.
I think part of it is that they don’t want to go with the easy option of just buying 1:1 translations of the non-vegan to the vegan options, like just buying processed vegan cheese.
But also the options they choose do feel weird on purpose. Why use jackfruit when making a quick meatless crumble is the far better option for a chili?

For the "hummus" cheesecake...you're not supposed to use actual premade hummus, you're supposed to just use an emulsification of chickpeas and a neutral tasting oil...using actual hummus would be disgusting...

For chili you could use textured soy protein granules. They're exactly like ground beef and I could never tell the difference

if one uses something like the impossible beef substitute for beef beef, there is very little difference in chili so easy. so good. my chili is mostly beans and vegetables anyway, using the "beef" as a flavoring. you guys make me smile. thanks!

To be fair they picked cheese as the main ingredient in these vegan recipes and cheese is very tricky to make from vegan options. We just don’t quite manage it yet. But I have hope. People are working on it.
