He hated soul reapers for their tainted past of killing and manipulation as well as sealing the soul king in such a ghastly form that they had to rely on it to survive. Aizen has planned way longer than madara Hes planned for centuries, manipulated the plot, cannot be killed, created the main character, played a giant role in the story, etc. You say madara is more interesting? Really? He's just a man who lived through war, was prejudiced, got angry, and wanted to put the world under sleep. Aizen on the other hand wanted to be him own person, became a god, clapped nearly everyone in the show, followed through with his ideals to this day has never stopped advancing, and has contingency after contingency in place. Even if the plot hoed him, he still never died, he hasn't ever really lost, and continues growing stronger by sitting in place.
