I wish you’d do some experiments with ostrich meat. It is super tasty! It’s usually grilled hot and served rare, and it’s amazing that way, but I have found it difficult to find good sous vide recipes for it. I want someone else to do the experiments for me... It is not all that hard to mail order in the USA, and I’d love to see what you think of it. I think you’ll be surprised.

Hi Guga!! I have to recommend a Greek traditional recipe that is so good, its called frigadeli! Here is how to make it: You cut a beef liver at small pieces and you season them with grated garlic, parsley, salt and black pepper(we also add a little bit of kefalotiri which is a hard cheese, you can use parmesan maybe but its optional ). Then you put in lukewarm water (not hot) some lamb caul fat until is tender. Then you take each piece of liver and wrap it with the caul fat. Put them in wide skewers and grill the in direct heat. I reccomed you to try it with some cold beer!!!

I have an idea, you can try cooking meats on traditional style cookware like from Argentina using an asado cross or gaucho grill or a street kabob grill or even a hibachi from Japan. For the “regular people” I think either injecting a ribeye roast with quality Wagyu fats is more realistic, but I love the way you butchered the roast. Fantastic as always. A popular thing to do with pork loin is to butterfly it and then add a paste of herb/bacon/garlic/etc and then roll it back up again prior to roasting. I wonder what this would taste like with your wagyu filling... Pork plus beef? Would that even work?
Hey Guga, I think you should have sliced it maybe a little thicker and seared every slice by itself (maybe with the help of some twine), that would have added a crust effect on each slice and maybe it would have been also more plesant aesthetically!
Good idea if one has Wagyu trimmings....i think the end product structure will be better if you add some 'meat glue' during the prep....so it will stick so much better as though it is 1 pc original meat & it won't fall apart during slicing. Just my opinion.... great video guyz
Forgot to add this, BUT if one were to buy just one piece of Wagyu A5 to add to a Prime roast, i think its not worth it. Only Wagyu A5 trimmings or fat trimmings is fine....i mean why would I destroy a nice piece of Wagyu A5 ribeye right... there are many ways to make a rib roast taste good even if it is a choice grade. Try this with some venison tenderloin season it liberally well. Pound it Flat Lay a layer of Colby Beef . Sous Vide it, when it's done find a cast Iron Frying Pan & some Butter. Brown it in the frying pan choosing your'e own Butter sauce. Just remember to keep on turning it, and Mopping it so nothing burns. This is without the special sauce... I THINK - that you should do exactly what you did in the video - but then AFTER you SLICE IT, FLAME THROWER THE OPEN FACES OF THE SLICES - and THEN SERVE IT!! I would also think about putting a sauce on the side (not on top) to go with it. THAT would probably not only make it look a lot better - but also taste better! Cheers! Guga, you should try this again but use other fillings in addition to the wagyu. Make it look like a porchetta so it looks more deliberate and less like a frankenstein meat.

Marinade any steak [ completely submerged in all] in Andreas steak Sause, Boones strawberry wine, Italian dressing And terikiaki for two days and then freeze for two hours. Remove thaw and cook.
