These Thai-style coconut pancakes/khanom krok are super delicious, gooey coconut cups of goodness. These pancakes are common through out the street food scene in Thailand and are adored by both tourists and the locals! These pancakes strike the perfect balance of savory and sweet. These pancake cups are made with a crispy outer layer and a coconut milk gooey inner layer. They are typically topped with spring onions/scallions and corn, but you could also top them with taro, pumpkin and sweet potato.

For the ingredients in the bottom layer, if it's all going into the blender anyway, what is the point of mashing the jasmine rice, making sure the jasmine rice and the rice flour are "mixed well" in a separate bowl, etc? Just dump everything in the blender to begin with and save some time and effort.
