    The pickles you eat with Khao Soi is pickled mustard greens, called pak gad dong in Thai, are a tangy condiment for khao soi. Made by fermenting mustard greens in a salty brine, they add a burst of sour, salty flavor to the rich curry. You'll often find them alongside other toppings like shallots and chilies.
    The pork sausage is Isan sausage or Sai Krok Isaan, is a fermented sausage from northeastern Thailand. Traditionally made with leftover meat, rice, and seasonings stuffed in casings, it has a tangy, savory flavor due to fermentation. It's often enjoyed grilled or steamed. While the spicy one is a kind of Sai Ua you're looking for but not as good as the original one.

      Those pickled mustard green are so good. Really give the food a extra kick! It’s delicious. Love the tangyness of them. Thai people really know how to make flavors in dishes pop!
      Oh that pork is fermented too!! That’s amazing. I thought it tasted tangy. I really liked it and it’s nice to know it’s made of leftover meats and foods. Love how the people don’t waste anything and turn it into something delicious !
      Almost kinda had the Sai Ua. Haha well it was delicious but I have to find the real one when I’m back ! Still on the hunt for a real Sai Ua sausage when I’m back !

    If you really like khao soi, in Chiang Mai there are eclipse classes available. You can try to find it easily. There may be a lot of steps, but it will be good if you go home. Then you have to eat rice soi. You will be able to do it yourself.😊

      Yes exactly! I have to learn how to do it myself. But it will never be as good as in Chiang Mai. The people here really have talent for it just tastes like love and deliciousness 😍😊😊
