  • Almond Crossaint
    .
    Ingredients
    Glaze
    - 1/3 Cup Water (80g)
    - 1/4 Cup Sugar (50g)
    - 1/2 tsp vanilla extract
    .
    Frangipane
    - 1 Cup Almond meal (100g)
    - 1/2 Tbs Corn Flour
    - 1/3 Cup Butter (75g)
    - 1/3 Cup Caster Sugar (70g)
    - 1 Egg
    - 1 Tbs Milk
    - 1/4 Tsp Salt
    - 1/4 Tsp Almond extract
    - 1/2 Tsp Vanilla Extract
    - 100g Chocolate (optional)
    .
    Topping
    - 1 Cup Sliced Almond
    - Icing Sugar as needed
    .
    Instructions
    1.Put water & sugar in a pot. Heat it until sugar fully dissolve. Set aside.
    2.In a bowl, whisk sugar & butter until combine. Then add in egg, almond extract & vanilla extract. Whisk until incorporated.
    3.Pour in the almond flour, corn flour, milk & salt. Whisk until combine completely.
    4.Slice the crossaint into half. Brush the sugar water mixture on the bottom halves of the crossaint. Then spread the almond filling evenly on top of it. Place the top halves to sandwich the crossaint back together.
    5.Brush the top of the crossaint with the sugar water mixture, then spread the almond filling over the top.
    6.Top the crossaint with almond slices, pressing it into the topping to stick it.
    7.Bake it at preheated oven (170C) for 10-15 minutes until golden brown.
