My family does a version of this as part of a brunch around Christmas every year. You can mess with the base recipe however you want and it’s always perfect. As Kevin said, peppers and jalapeños are great in it, as are sautéed mushrooms, scallions, artichoke hearts - whatever you want. Love this dish!

I like hash browns with ketchup, so salsa doesn't sound all that weird with it. Though I like baked potatoes, I dislike mashed potatoes too. When I eat a baked potato, I don't fluff it at all. I just scoop the insides from the skin and eat it (and add more butter as needed), then eat the skin.

I didn’t know that’s what hash browns looked like. I thought they were formed into shapes using grated potato, like the hash browns you get from McDonald’s. So they’re just small diced potatoes. This is not the same, but similar to a Spanish frittata, with a different flavour profile. Thanks for the review and recipe.

I can’t do mashed potatoes either Tami. I love baked potatoes but I don’t add tons of butter or make it soft In the skin. Prefer it chunky and to taste like a potato still

Random question but what kind of pans do you use? I am in the market for some new ones and just keep seeing such bad reviews of everything. Yours don’t seem scratched or stained. I use only silicone and don’t cook at super high heats but mine still scratch and flake over time. Wanting to avoid anything possibly toxic.
