Winter is coming and I'd like some good Asian style hot soup with noodles. I can't find a proper Udon or other chewy style noodle in the local grocery store....do you have any suggestions on where to find or how to make this type of noodle and would love to see you make some Asian style soups. thank you

I found more vids on udon soup and making the noodles since posting...this article www.instructables.com/id/Homemade-Udon-Sanuki-Style/ has a recipe for udon and expresses the frustration in trying to find an authentic noodle in the US unless your lucky enough to live close to a good Asian restaurant. Found some KA-ME brand noodles that make a passable soup but the chewy texture is lacking. Going to dust off the Kitchen Aid mixer and try making some but doubt if I can match the art of centuries old noodle making skill. Thanks for taking the time to reply but the link was dead.
Thanks James, don't have all the ingredients yet for the hot pot but just watching the video took the chill off this ice storm we're having right now...liked the method of blanching the chicken and changing water to get a clear broth.
Just curious, is your wife Korean? (Or perhaps of Korean descent?) Anyway, that soup looks delicious! Wish I could have stayed in Korea longer the last and only time I was there, so I'd be able to eat more food!
