오늘은 중국식 생선찜인 청증어를 준비해보아써요👩🏻‍🍳

청증어는 중국 황제들이 별미처럼 먹던 흰살 생선찜입니다. 국내에서는 성시경님의 잘자어로 유명하구요. 원래는 한마리 통으로 하는 요리지만 저는 오늘 농어필렛으로 요리했어요. 밥반찬으로도 좋지만 술안주로도 기가막힙니다.
손님상에서 끓인 기름 부어주면 지글지글하게 파향이 올라와서 맛도 물론 너무 좋지만 시청각, 후각적으로도 으뜸이에요.
생강과 파 몸통은 크게 숭덩 썰어둔뒤 찜기 위에 대파, 칼집낸 생선 사이에 생강 썰고 청주 뿌려 쪄주세요.
물4: 간장3:설탕1:정종2 섞어 술향 날아가게약불로 끓여주시고(끓이다 불이세서 졸아들면 물을 추가해주세요)대파흰부분,홍고추,청고추, 생강 채썰어 준비해주세요.
생선이 다 쪄지면 간장과 채썬 야채들을 올린뒤 기름을 끓여 파채위에 끼얹어주면 완성!
