      I actually made this last night. The Chile I used was slightly different and, I wasn't able to find the low sodium broth. And I didn't have garlic powder. But it was my first time making Chile this way. Absolutely loved it!:)

    If you cook your beef in two batches it won't get soupy and it will brown quicker. It's best to get the sear on when the meat is raw. That sear is what seals in the juices so that each chunk is not dry.

    I made this Chile Colorado just like you did step by step for the first time and gave some to my neighbor it was so good she complemented that every time I make it I make sure that she gets a combo plate. Thank you so much for this wonderful recipe.

    Wow! Thank you so much. I’m living in portland, recently moved from Fresno, Ca. One of my favorite dishes at Mexican restaurants back home was chili Colorado. Mexican food in Oregon has its own twist on it.. to say the least it’s not Cali Mexican food. I came across your recipe and remembered why I’m living. Thank you. SUPERB RECIPE👌🏽

    My mom makes this, EVERYONE in our Family favorites. She uses peanuts and other stuff...gotta get her ingredients because she nails it everytime.

      Sounds like a "mole" , what with using peanuts, or pumpkin seeds, cinnamon and chocolate..which is fabulous!!!

    Okay... I'm making Chile Colorado for my buddy, his sister plus others.
    They are Mexican and know Mexican food of course but his sister said she's never made it so I'm going to go for it.
    I'm Sicilian/American but thought I'd put my butt on the line and make Mexican food for Mexicans!
    I LOVE Chile Colorado and need to add it to my list of killer dishes(Trial and error dishes).
    I'll update my comment tomorrow to reflect how AWESOME it comes out.
    I picked up 7+ lbs. of chuck last night at the Mexican market(I'm in Los Angeles)/Venice and trimmed it for 2 hours last night.
    It's now 5.6 lbs. My chickens get the trimmings/silverskin.
    I did my best not to remove any good fat.
    My mouth is watering from your finished photos!!!
    You're killin' me!

    Love it. Add a sprinkling of 2 tspn baking soda on the raw meat and let sit for about 20-30 mins to get that fond easier.

    I have made this recipe 4 times, if you count today, and I really appreciate your fantastic video. I follow it every time I make this tasty dish. The one thing that I do differently, and it happened by accident the first time, is I use a higher volume of the "chili steeping" water when I puree my chiles, about half the left-over pan, and then rinse the remaining puree residue out into the pot with the second half of the same water. I also add my Knorr caldo de res in with the chiles at the beginning of the puree process. This seems easier and at it blends it into the puree well. I love how simple you have made this process. Thank you!

      I also have used both pork and beef separately and together in this recipe and the results have been fantastic. I was, up until your video, which I watched for the first time in July of 2021, intimidated to make Chili Colorado as it seemed so exotic and has always been my favorite Mexican dish. Your video inspired me to make what is certainly now and still, my all time favorite Mexican dish. I have also used it to cook wild pork that I hunt every year, and it is fantastic for that as well!

    Thats a beautiful meal.i defintely will try it.i love my brothers mother in laws mexican cooking.your food reminds me of hers but i never had chile colorado.she moved back to texas and i miss her food.thankfully i have you with your wonderful recipes and i can see you put care and time in what you do and you actually teach how to cook.as soon as i get some beef,this is what i will be doing.this seem to deserve much more likes.but anyhow,i will defintely try it.thanks again.your husband is one luck man.

    OMG This came out soo good the only thing different on mine is just the Chiles I only had guajillo so I just added 4 extra instead of just the regular 5 but rather than that it is a perfect recepie my husband took it for lunch he said it was incredible😁👍👍👍💪 and very easy to make will keep this recepie saved for future Chile Colorado

    I searched your recipes and can not find anything on napoles. Do you think you could do a video on how to cook it and use it in recipes? Being in South Texas I see it is stores but have no clue on how to cook it. I asked the girls at work but you’re my go too. ❤️❤️

      I can be an extra grandma, auntie or whatever position is left open. I love to prep foods and clean up but of course I will be taste tester to be sure no seasons got mixed up and it could be a disaster if served. I also set a proper table for guests or pot luck dinner style. I am retired so I can watch the pot simmer all day👀 and children too!
