    This makes me think of my wife. She only made mole for me since she said it was hard for her to make. I do remember that there was a bit of stains from the process.. she would use peanut butter and it would make it taste rich. Thank you for the memories she's been gone 8 year's now.

      Sorry for your loss Paul. I lost my hubby in 2008 and I was a young 52 then. I know it’s tough. Glad you have happy memories.

      I can sympathize though, lost my grandfather and uncle on my mom's side, and my cousin on my dad's within the past 2 years, it's rough

    My grandmother is 91 and lives in Zacatecas, Mexico. She's been making molé since she was 12 and taught me all her molé recipes. I sent this video to her and she said she's definitely gonna try this recipe.

    My grandma used to make mole from scratch and it was a whole day, all family reunion type of deal, I loved the smells and the amazing taste of the mole over chicken with red rice, thanks Kent for bringing these memories back, love from Mexico.

    Pumpkin seeds without the shells are available in the market in the Mexican aisle. They’re called pepitas.

      In a lot of ways its like Indian food, multiple blends of many spices/nuts/fruit/etc to produce a unique flavor, BUT its more earthy, deeper, heartier, than the Indian style. Lived in the UK for 5 years, loved indian, eaten mole a long time

      Mole is way older than any state itself, prehispanic cultures made something like it called mulli.

    This is my go-to order at Mexican restaurants to see the different flavors from different chefs. I love the demonstration and I may try it soon.

      Yep. It's different every place you go... almost. Some of them use the canned or jarred mole and you can tell because those all taste the same.

    I've never seen it with almonds and pumpkin seeds. We've just stuck to peanuts only and we also fry the chocolate in just a tad bit of oil to get it melted very well instead of boiling it in with the sauce. Glad you enjoyed that dish it's always the go-to at any mexican party!👍

    I love Mole sauce, My mom would make chicken & mole for Christmas. It would take my mom and abuela 2 days to make the sauce and once that was done, mom would add chicken drums and thighs (bone in). Oh there is nothing like homemade mole sauce, enjoyed this video, it brought back some good memories, thank you.God bless you and Shannon and your food testers too.     My favorite dish of all time. There’s a lot of variations of mole. You can add more chocolate for the kids. You can add more broth to make it more “liquidy “(🤷‍♂️ ) or make it even thicker.
    Myself I prefer more chocolate and a bit less thick. And I don’t like putting the chicken in the mole to cook. I like the gush of chicken flavor when you bite on the chicken accompanied by the taste of the mole afterwards. Left over mole can be used with some scrambled eggs and refried beans. Or mix it with some white rice 🤤

    Mexican super fan living in Canada. THANK YOU for not calling Mole a chocolate sauce. What you made it has been the closest of traditional Mole I've seen from American RUclipsrs.     I made a Turkey Mole When I was in Home Ec. MANY MANY Years ago when we had a Multi Cultural Section. My Teacher And I were the only ones to try it. For some reason everyone else was leery of the Chocolate in it. Turns out to be a good thing, I was allowed to take the left overs home, and since it was a full sized turkey, It made some great sandwiches as well...
    Oh. And I was the only one to get an "A" for that section... Not only because it tasted Really good, but also because i was the only one to do a recipe that was not ...."Normal". The others went with stuff that you can find in any chinese or greek or french home that was "easy" to make.

    I have even seen plantains and Ginger Snap cookies added to it.
    Depending on what part of Mexico you go to the ingredients change there is even a green Molle.

    That is the way to do it! One trick for finding the best dried chilies is to find the ones that have some flex, rather than break apart when you bend them.

    I'm from Los Angeles and there was a place that was always stocked with authentic Oaxacan Mole. All you needed was, tomatoes, garlic, and chicken broth.
    Man it was delicious!

    I believe this recipe has the most ingredients I've ever seen you do. Never had any idea so many things went into it. I'm familiar with mole but have never had any but it looks incredibly good. I'll bet it's worth every bit of the time and effort to make it but I don't have the ability to go through all that myself. Nothing's better than homemade, especially your homemade, but I wonder if there's a commercial mole out there that's a good second best.

    I know you don't like green peas , but I love them now that I'm older , ( I hated them when I was younger ) I even like dried split peas ( American staple / traditionally ) coked on an open fire . But other than the pea thing I think you are absolutely great , I really mean that , everything you have been able to accomplish is amazing , and I just want to say thank you . Your amazing . Have you ever tried sugar snap peas , I love them raw , and I'm not a salad guy . I think they ( made / helped ) me learn to like regular peas .

    Mr. Rollins, maybe the addition of the fried bread and more Chocolate to make it Dark would be my advice, but my GranMa from Puebla (RIP) would approve this.
    Don't forget that Turkey is the best meat for Mole.

    Kent that looks so good and I do love mole sauce! I have learned over the years from some Mexican friends and a gentleman who owned a restaurant in Santa Fe that there are many kinds of moles, including a green one made from fresh chilis. But the one you made is my personal favorite! I do like it over chicken, but over turkey for me is the best (also traditional). Thanks!

    Sunset Magazine has a traditional recipe for Mole Sauce in their recipe archive my wife and I made it years ago. Took us two days of grinding, mixing, roasting, and toasting. But was it so good!!

    Well played sr. gotta respect its actually the 1st cocking channel that did not mess up a mexican recipe with some "imaginary" ingredients (or ingredients that american chefs thing goes 'well' on mexican recipes), that Mole look so freaking authentic and amazing! love it mr.
    BTW! i bet you can found mexican chocolate called "Chocolate Abuelita" in almost every walmart or HEB... or maybe take a look on an hispanic market/store!! its actually popular and its on a yellow colored small box with an old lady on it! presentation might vary but it have an hexagonal/circle form! :) bests.

    Man, that was one amazing mole! Very few people make it all from scratch using all the ingredients but as you said, the result is definitely worth the effort. Also, don't worry about changing the proportions, they say everyone makes it differently and I can tell from experience that's true. Like, my mom makes it more on the sweeter side, my in-law makes it hotter, adds bread but no almonds.

    I love mole!!!! Different parts of Mexico have their own versions!!! But the best mole I’ve had was in Puebla!!!! Here in Chicago once a year we have Mole fest with different vendors and they all have their own versions from different regions and all are good!!!

    I want to thank Mexico for their gift to the world ,and that gift is Chocolate. It was the Mayans of Mexico

    Are you sure you’re not from Oaxaca? 😄🤷🏻‍♂️ Mole is such an elaborate, time consuming but yet delicious dish that it was often served in wedding banquets and big fiestas. Here in Mexico, nowadays you can find great moles in every street market, no kidding. Sam’s Club has a pretty decent one. “Xiqueño” is the brand. The best moles are made in Actopan (Mexico City), and the states of Puebla, Veracruz and Oaxaca.

    What a great recipe I noticed a big difference from mexican food in Texas compared to San Diego my family is from Mexicali through sacatecas and Sinaloa and my abuelitas recipes are very different than what I saw when I lived in Texas
