    Kala Chana
    Preparation time 5 minutes
    Cooking time: 30 minutes
    Serving :4

    Ingredients:
    Kala-Chana: 1 cup
    Salt:½ Tsp. or as per your taste
    Garam-Masala:¼ Tsp.
    Coriander-Powder: ½ Tbsp.
    Red Pepper powder: ¼ Tsp or as per taste.
    Asafoetida: 1/8 Tsp.
    Cumin Seed: ½ Tbsp.
    Method:
    1.Soak Chana over night and wash them thoroughly with fresh water.
    2.Add water in pressure cooker and add salt in it.Add Chana.
    3.Place the cooker on the flame and when it comes to a boil, close lid of the cooker, keep the heat on slow and let it boil for 30 minutes.Turn off the heat.
    4.Let the pressure release naturally and drain all the excess water.
    5.In a pan add ½ Tbsp. of oil and when hot enough, add Cumin Seeds.
    6.When start crackling , add all the Powdered spices and let it cook for few seconds.
    7.Add Chana in this and mix well. Serve hot with Prasad or can be eaten as snack or breakfast as well.
    Sooji Ka Halwa
    Ingredients:
    Semolina or sooji:1 cup
    Sugar: ¾ cup or as per your taste.
    Water: 2 ½ cups
    Green Cardamon:7-8 pod (crushed finely)
    Ghee (Clarified butter):6 tbsp or ¾ cup.
    For Garnishing:
    Pistachio:1 Tbsp. (chopped)
    Almond:1Tbsp. (chopped)
    Raisins: 1Tbsp.(chopped)
    Saffron: ¼ Tsp.(Optional)
    Method:
    1.Add Sooji in a pan and dry roast it on slow flame for 8-10 minutes until it is golden brown. Add Pure Ghee in it and mix it well.
    2.Meanwhile in another pan add water and bring it up to rolling boil.
    3.Add sugar and crushed Green cardamom in it. Now simmer the flame. Cook it for five minutes.
    4.Add Semolina little by little in it as it splutters a lot when hot.
    5.Mix it well and cook it for another 5 minutes or until all the liquid is dissolved.
    6.Spread the hot Halva evenly on a flat dish.
    7.Sprinkle all dry fruits on it and let it set Garnish it with silver Virk(optional).
    Poori/Puri/Pudi
    Ingredients:
    Whole Wheat Flour: 1 cup.
    Carom seeds: ½ Tbsp.
    Oil: 1 Tbsp.
    Salt to taste
    Method:
    1.Add all the ingredients together and mix well.
    2.Now keep adding water little by little and knead a stiff dough.
    3.Make Key Lime size balls and roll them in approximately 3½ inches of diameter.
    4.Roll all balls. Now in a deep pan add oil. When it is hot enough start adding Puris one by one or you can add more than one Puri if you have bigger pan. Fry them from both of the side.
    5.When it is golden brown take Puri out of the oil and place it on paper towel to get rid of extra oil.
    Aloo Curry( Tari Wale Aloo)
    Ingredients:
    Potato : 4 Medium size(Boiled)
    Tomato : 1 Big size to 2 small size
    Green Chili : 2
    Ginger: ½ Tsp Chopped
    Turmeric : ¼ Tsp.
    Coriander powder : 1 Tsp.
    Asafoetida : 1/8 Tsp.
    Red pepper powder : ½ Tsp.
    Salt to taste
    Coriander Leaf for Garnishing.
    For Tempering :
    Bay Leaf : 1
    Cloves: 2-4
    Green Cardamon: 2 crushed
    Pepper Corn : 8-10
    Cumin Seeds : ½ Tsp.
    Method:
    1. Boil the Potatoes and cut them in bite size pieces.
    2. In a Grinder add Tomato, Green Chili, and Ginger and grind it in fine paste.
    3. Add 1 Tbsp. of Avocado oil in a pan and heat it.When hot enough add all the ingredients of tempering in it .(You can use any of the cooking oil).
    4.When start crackling add Tomato puree in it and mix well. Add all dry spices in it. Let it cook for 7-8 minutes.
    5. Add boiled Potato in it and let it simmer for 5-8 minutes.
    6. Garnish it with green coriander. Serve hot with Puri or Roti.
