I have one of these, and it’s great for holding brisket overnight before service. Lets you finish a cook the night before, get a good nights sleep, and serve guests the next day just like they do at top barbecue restaurants. Highly recommended.

What temp do you set it at to hold brisket and ribs overnight?
140 for brisket. I haven’t held ribs overnight.

Just got one of these and its not easy to operate. Instructions might as well be in Japanese and no phone number at vevor to call. Awesome $500 buy

The ones I’ve been seeing rest there’s with like beef tallow and wrapped tight in foil, maybe it absorbs the juice?
Does it fluctuate in temp? Or does it hold steady at whatever setting you set it at?
