Hi there, you could also glitch through the white gate not triggering the AI and killing her there. Would need to die first time around to be able to get the white gate though. Still works
So I tried this strategy... I didn't do this exactly, but I did take into account of taking on the limbs while using fire paper and beast blood pellet..... Works like a dream!!! Thank you!

Not bad at all. Now that we know what beast blood pellets actually do it's gotten pretty easy to get her done in under 30.
Facts, beast blood pellets are insane. I’d say one of the best items in all the FromSoft games.
